Armenian Rice Pilaf

My family raved over this dish. Even my husband, who isn't a rice fan unless it is fried rice, said how good this was and how well it went with the roast pork I had made. This seems to be a very versatile dish and would probably pair well with about any meat. I used linguine that I broke into sixths. Thanks, it's very good!

Traditional Salisbury Steak

This was a great dish and really simple to make. I could throw this together anytime for a nice hearty meal. The Hungry Teen had two servings while my husband compared it to swiss steak which I agree, it does resemble. So other than it not really being what we thought of as "traditional" salisbury steak, it was good and I would serve it again if hubby was not here. (He does not like swiss steak). I didn't have mushrooms.

Sweet, Sticky and Spicy Chicken

This was sweet and medium spicy, but the soy saltiness was way too strong for me in this dish. Seeing this was an asian type dish I used Thai sweet red chile hot sauce, but then also used 1/2 of the cayenne pepper sauce called for, louisiana style hot sauce. I used ginger paste from a jar. This was good but needs a few tweaks to make it great.

Chicken Continental

This was delicious! What a great family pleaser too. My husband loved that this was comfort food on a cool fall evening. I cut my chicken into strips and added a half can of cream of mushroom soup as well. I used canned portabella mushroom pieces drained. I added a good tsp of chicken bouillion granules with the water and used long grain uncooked rice. I just simmered this about 30 min and it was fantastic. The rice got a little brown on the bottom of the pan, but that was my favorite part! Thanks, very good dish.

Beef Enchiladas

This was nice that it used things I usually always have on hand to prepare. I used corn tortillas because that's tradition. Instead of canned green chiles I used 1 frozen Hatch green chile from my freezer and chopped it up still frozen. The sauce had a really nice flavor. It was similar to a marinara rather than a chile flavor sauce. It was thicker than I thought it should have been and a little sweet. The overall dish was a little dry though and needed more sauce. I cooked the meat with some chopped onion and garlic and added a little comino for flavor. We all liked this okay and agreed we would eat it again if prepared, but have other recipes we like much better.

Ruby Drive Sloppy Joes

Oh WOW! Spicy hot tangy sweet rich tomatoey YUM. These are sooooo good. I used ranchero salsa and louisiana hot sauce. I added 1 more spoon of sugar to balance the heat. I did add a tsp of minced garlic to the meat as it cooked and about half tsp of chicken bouillion granules and 1/3 c water. I had to simmer this though for an hour to get it thickened. Edible but a bit on the hot side the way I made them maybe louisiana hot cayennepepper sauce isn't the type meant here? Either way, they are delicious!!!

Mushroom and Swiss Chicken

Don't mess this dish up like I did by using creole seasoning as it turned out way too salty. I was out of cajun spice so I didn't think it would matter. Next time I will look up a recipe for homemade cajun seasoning salt free. Otherwise this would have turned out pretty good. I used double the garlic as we love garlic.

Savory Herb Rice

This was alright but it wasn't impressive. I'd eat it again, but there are a lot of other rice dishes I'd prefer. The herbs were strong and it isn't a mild side dish. This was simple and not bad, overall a dish that is fairly versatile, like I said I'd eat it again. We had no leftovers here.

Spicy Melted Cheese Dip

This was pretty much just rotel dip with meat. It was good though, but not spicy. If you want it spicy you need to use the "hot" blend of rotel canned tomates with chiles. I used leftover taco meat instead of ground beef since I had it available and was looking for new ways to use it up. This was good enough to make again.

Wally's Rib Rub

Wow. My husband raved over this rub and that just doesn't happen. It was sweet but the heat balanced it out. Due to changes in scheduling this sat for two days before we cooked them. The Hungry Teen didn't like the spice, he said they were too hot.

Garlic Angel Hair Pasta

This was a nice hot meal and so quick and easy to fix. I used minced garlic from the jar and spiral pasta. I thought this needed some kick though and could have used a healthy dose of cayenne or crushed red pepper as well. Not bad, but I thought it was too bland for me.

Kendra's Maid-Rite Sandwiches

This was a great little sandwich. It was similar to a sloppy joe without all the tomato saucey taste and spices. My husband said he liked this better than a sloppy joe sandwich and even went back for seconds. It was a bit dry though starting out so I added some beef broth and let it simmer until the liquid was gone, twenty minutes. No other changes. I'd eat this again, it was pretty good.

Pumpkin Cake II

While this turned out very pretty we all thought it rather bland tasting. I made this several days ago and had to toss the rest of the cake (over half) since it didn't get eaten, a rarity at this house. I left the nuts out, but that didn't affect the cake enough to alter my rating. Sorry this just didn't work for us.

Chicken Pot Pie I

This was insanely simple to do. My husband said it was perfect and gave this 10 stars. The Hungry Teen had seconds. I thought it was rather bland and needed more seasoning. I did use 2 cans of soup 1 cream of celery and 1 cream of chicken with herbs. Instead of two cans of veggies I used 1 large can of large cut mixed veggies. So easy this is one I'll give to the kids as they move out it's a great starter recipe.

Hungarian Goulash I

We enjoyed this dish. I used a chuck roast and this was really budget friendly served with buttered parsleyed egg noodles and a dollop of sour cream on top. My teen even went back for seconds. I only used 2 onions as they were large Texas Sweets. Thanks this was pretty good. Not my favorite, but it was good for such an easy recipe.

Fluffy Pancakes

Wow, these are really good! I tried this just because and this is as good if not better than our favorite recipe. I'm impressed, and that is saying a lot for a simple pancake. These babies are very tender and had quite a nice flavor. I doubled the melted butter. I had to add more milk though as my batter turned out very thick. I'm glad I tried a new recipe!

Pork Tenderloin with Gravy

My family really liked this dish a lot! I doubled it to use up two tenderloins and cooked them with a hefty tsp or so of minced garlic. I used 3 packages of gravy so there would be plenty. This was perfect over rice. I'll definitely keep this quick and easy dish on file for future use. This reheated very well the next day too and was just as good if not better then. Thanks for sharing this Marilyn!
