Fried Rice

We devoured this rice! My guys tore this stuff up. Not a bit left. I did sprinkle in some chicken boullion granules to the rice when I cooked it. I used 2 eggs, scrambled them and chopped them up. Instead of garlic powder, I added a tsp of minced garlic to the onion and sauteed it a moment then added the rest. This turned out wonderful. Add a little diced ham and a handful of green peas to this and you can make an meal out if it by itself.

Unbelievable Chicken

Hmmmm....well believe it or not, we really didn't like this. It was too tangy and my husband said it tasted like vinegar to him. Due to a last minute change of dinner plans this sat in the marinade overnight. The Hungry Teen liked this okay and had seconds. It wasn't bad, but I won't use it again. Thanks.

Hearty Scrambled Eggs

Delicious eggs, Easier than an omelet as I have trouble trying to turn those and have it still look pretty. I left out the mushrooms as I don't like them and used onion powder instead of fresh. This made a very good breakfast, thanks!

Ribs Fantastic

The meat turned out very tender, but we didn't care for the sauce. It was thin and watery and my son thought it tasted weird, so he covered this in bottled sauce from the fridge instead. I only cooked this 1.5 hrs. due to time limitations and glad I stopped it when I did as they would have been burnt to a crisp if I had left these in the oven for the full 3 hrs!!! I probably won't try this again.

Herb Grilled Vegetables

This had wonderful smoky grilled flavor. Nice flavor in this dish. I used frozen pre cut veggies and had hubby grill them in a little foil boat until they were tender, so we didn't get the pretty grill marks. The flavor was great though. Thanks!

Italian Chicken Marinade

This was okay but nothing spectacular. I only used enough dressing to cover the chicken, certainly not the whole bottle. I only had a 1/4 bottle anyway to start with and still had some left for salad after pouring it over the chicken. Our fire just didn't get very hot so the pieces didn't get a pretty color or nice grill marks, but the taste from the grill was there.

Chicken a la Camille

This was a different way to make barbecued chicken. My family enjoyed this very much and devoured every morsel. I thought it was okay but I didn't think the Italian seasoning went so well with the smokey hickory barbecue sauce. I didn't dip anything just sprinkled the seasoning over the chicken and the same for the sauce. This was simple and the family enjoyed it. Thanks.

Spinach Frittata

This sounded good, but we really didn't care for it. I had difficulty getting mine out of the pan so it didn't look very pretty either. I did have to add more eggs though as there was barely any and it didn't even cover the bottom of the skillet.

Cobre Valley Casserole

This was a hit with my family. I served this with lettuce and sour cream and it was like a taco salad. I used Taco Seasoning I by Bill Echols and a small can of mild Hatch chiles. I only used 1 can of Rosarita refried beans as it was only for 3 of us. The next time though I am going to mix some of the tortilla chips in a little more like a taco pie/casserole. We'll definitely have this again. Thanks Carolyn, this was great. We really enjoyed this.

Ginger Veggie Stir-Fry

This turned out very good. I used ginger paste and a mix of frozen vegetables. I doubled the coating to make the whole bag of veggies. This was great over rice. I liked this dish. It could use twice the ginger though and maybe even a smidge of garlic chile paste too. Thanks for a great meal.

Whipped Butternut Squash

I cut this in half since I only had 1 squash and I peeled it, cut it in chunks, sprinkled the salt over and microwaved it with some butter until it was tender. Then I used a fork to mash it and only used half the sour cream as it was all I had. I left off the pepper at hubby's request. This was alright but seemed like they needed more moisture as the squash absorbed it all and these were rather thick. This was good, but we prefer ours the sweeter traditional way with brown sugar and butter. Thanks for the idea, it was a nice change.

Chicken Wings Fricassee

This was okay and got eaten but really didn't have much flavor and there wasn't any gravy to speak of just onions and chicken. It was an inexpensive meal and super easy to prepare, but not impressive enough to fix again. Thanks anyway, we enjoyed trying out a new dish.

Buffalo Chicken Wings II

These had no flavor whatsoever.I used Frank's Red Hot Sauce. I had even doubled the sauce part since it seemed pretty skimpy just by reading it. We added quite a bit more sauce at the table too and it didn't help. Definitely next time I'm using a recipe that calls for a marinade for the chicken first to get the flavor into the meat itself as my husband suggested and then grill them. Sorry, we just weren't impressed.

Grandma's Eggless, Butterless, Milkless Cake

Eggless, butterless, milkless, and TASTELESS. Very moist. This wasn't done in the middle though even after baking for 35 minutes. It rose up nicely and looked decent, but had no flavor. We only ate a couple of bites. Even my hungry teen didn't like this. Sorry :(

Garlic-Chive Mashed Potatoes

This was a great side dish. I only used half the sour cream though as it's all I had but I added some heavy cream to make up for it. I also used minced garlic that I sauteed in a little melted butter since I didn't have whole cloves on hand. Thanks for the great dish.

Jalapeno-Blue Cheese Burgers

My husband and I really enjoyed this burger. I cut back on the jalapenos at hubby's request and only used half the blue cheese as it is too strong for my tastes otherwise. We loved this burger though. Thanks!

Neat Sloppy Joes

Great tasting little sandwich. I used dried minced onion instead of fresh and garlic salt instead of plain. There was plenty of sauce and they weren't too dry at all. Wonderful flavor this didn't taste at all like meat and canned soup. I didn't even simmer this one my usual 30+ minutes, just heated it up and let it simmer while I toasted the bread. Definitely a keeper! Thanks for a great recipe.

Sloppy Joes

Fantastic sloppy joes, athough these are really more a barbecue sandwich than a true sloppy joe. A little on the sweet side though so next time I'd cut the sugar. Very tangy and great flavor overall. I used Sweet baby Ray's sauce and didn't have fresh onion so I used onion powder. I used celery salt instead of plain because it sounded good. Thanks, these were really good!

Sweet Herb Scramble

These were okay but certainly didn't look appetizing at all. My eggs came out really pale in color and too much green stuff. The herbs were indeed sweet tasting and it was a nice change from plain scrambled eggs, but not really my preference. I thought they were okay but would not fix them again. Thanks, I enjoyed trying a new dish.
