Penne Pasta with Cannellini Beans and Escarole
This recipes is good, except it calls for way too much pasta - this is why most reviewers may have called it bland. I only used about 8 ounces, vs. the 16 in the recipe, and the pasta to veggie ratio was still way too high. I also took other reviewers suggestions and added sauted garlic, onion and red pepper flakes. I would make it again with less pasta.

Shortbread Cookies III
These are very good, and egg-free (food allergies in my family.) I did a few with strawberry jam in the center, and those were the best.

Chocolate Nuggets
My little boy is severely allergic to eggs, so I'm always on the lookout for egg-free recipes. My family and co-workers raved about these.
