Best Ever Banana Bread

So so good and really light and fluffy; not dense and dry like most banana bread recipes. I even made a mistake and switched the measurements for the oil and half and half (which I subbed for the buttermilk) and it was delicious! I used 3 bananas, omitted the nuts because I didn't have any and baked two 8x4 loaves at 325 for 45 minutes. I think I can throw out my other banana bread recipes now because I'm not going to need them!

Tasty Baked Meatballs

Yummy, and super simple to put together. I also used Italian dressing mix in place of onion soup mix, and made them a little bigger than the recipe called for, so I ended up with about 2 dozen honkin' meatballs. I froze what the family didn't finish and the leftovers reheated so nicely in a pot of sauce. Maybe better than the first time around. Thanks for sharing!

Jamaica Cake

Awwww yeah. This is one awesome cake, my friends. I subbed 1 c. sugar plus 3/4. c brown sugar for the 2 c. white, cut the oil in half and used 3 bananas because bananas are made of win. I also shortened the baking time to 45 min @ 300, but that's only because my oven is electric and therefore sucks. But in the end, this is dynamite! Thanks for sharing!

Bacon Cheese Frittata

OK, this was really yum. God bless the ingredient search feature, or else I would never have made it. My mods were as such: turkey bacon, a few dashes of hot sauce and about 2TB of grated parm, mostly because I needed to get rid of it. 2 adults and a preschooler made fast work of the entire dish. Husband is already asking when I'm going to make it again. Thanks for sharing!

Asian Tuna Patties

Really good and really easy to make. I substituted chili sauce for the ketchup and dusted the cakes with panko instead of cornmeal, but otherwise followed the recipe as written. My husband was skeptical when I told him what was on the menu, but he ate them up! I served with a teriyaki dipping sauce and the ever popular sesame noodles on the side. Will make again.

Spinach Tomato Tortellini

Yummers. Funny story: I was looking on allrecipes for a dish to use up a bag of Barilla tortellini I had in the pantry, and found this one. I later realized I had saved it to my recipe box over 2 years ago. Shame on me for not making it until now. I added 4 hot Italian sausages, casings removed and crumbled, used Italian seasoning blend instead of the basil and a whole bunch of spinach, chopped. I'll be making this again for sure.

Dixie Pork Chops

Yummy. I had some trouble with the gravy because I didn't get a lot of drippings from the chops. It was lumpy at first, but I added some chicken stock and worked it out with a stick blender. The end result was delicious.

Stuffed Peppers Italian Style

This was pretty good, but there was something missing. Not sure what, though, because the olive/anchovy combination added a really nice flavor. I'll probably make these again, and see if some recipe modifications will improve it.

Cheesy Ham and Hash Brown Casserole

I enjoyed this, but I'm giving it 5 stars for my husband's reaction. I made it for Christmas breakfast, and he had polished off the entire tray by the next afternoon. I didn't make any changes to the recipe. He has already asked me to make it again.

Cake Balls

These are spectacular. I made chocolate cake/pecan coconut frosting dipped in melted semi-sweet chips and carrot cake/cream cheese frosting/about 1/2 cup golden raisins dipped in melted white chocolate chips. For both kinds I used probably 3/4 can of the frosting, shaped the balls and chilled them in the refridge for a few hours before dipping. They look beautiful and taste even better. I actually had to hide them because my husband kept eating them! I will def. be making these again.

One Dish Chicken Bake

This was way better than I thought it would be. I used a lb. of chicken tenders, sprinkled seasoned salt on them and topped with some shredded Swiss. Other than that I followed the recipe exact. It was delicious.

Easy Cajun Jambalaya

This was a big hit at my house last night. And so easy to assemble, too. I took the advice of some prior reviewers and modified it just a bit. I added a can of diced tomatoes, and used 1lb. of lite kielbasa and 1 lb of chicken tenders, cut bite sized. I used a big box *and* a 14 oz. can of chicken stock. I also probably tripled the garlic, because I love it so. Yummy.

Kielbasa Stew

Honestly, this was waaaaay better than I thought it would be. I didn't make any modifications and didn't have any leftovers. I do like the suggestion of adding the beans, so I think I'll try that next time. Great recipe!

Chicken and Peppers with Balsamic Vinegar

Yum. This one goes in the rotation for sure. The only modifications I made were to cut the oil way down and amp up the garlic. It was so easy to make and the taste was wonderful! Looks pretty, too. :-)

Crunch Bar

These are spectacular, and so easy! I made two batches and gave them away as Christmas gifts. Everyone was so shocked that I 'slaved' in the kitchen to make toffee. :-p I will definitely be making this recipe again.

BBQ Chicken Calzones

This was pretty good! My husband, an avowed BBQ hater, raved. I did find them to be a little on the dry side, so I think next time I'll use more sauce and a little more cheese. I ended up making 4 individual calzones. **OK, update! This recipe is so versatile. I recently made the calzones using leftover shredded cranberry pork roast and brie cheese. It was scrumptious.

Crab Quiche I

Love this recipe. I've been making this for a few years now and it always comes out perfectly. The only modifications I make are to use 3 eggs, and also add some Frank's Red Hot and a little Old Bay to the mix. I serve it with a roasted veg on the side. So good.
