About this Cook
I grew with a dad that loved to cook on weekends....he was a great cook...my mom was a great cook once...when she used my dads steak filets as pot roast...well it was the best pot roast I ever had i told my dad...I dont think he ever got over that one...LOL...I have 4 kids and when they were growing up I would make things with them..to show them around different spices and things...I love cooking for friends and family...Ive been in the catering biz 30yrs and I still rather cook as a hobby...but its never work in the kitchen for me...its a passion of love for great food and great times...the two go together....

I have had a few fires....once I was cooking for a date and set off the smoke alarm in the building...fire dept showed up...no fire...just lots of smoke from the boiler...why do they but smoke alarms by the kitchen anyways...well that was my last date with her>

Rice Vinegar Basting Sauce
Its a good sauce, alittle sweet for me..next time cut sugar to 1/2 cup..I added a little salt and tobasco for heat..I didnt have fresh ginger on hand,so I used powder ginger 1 tsp...next time I might try the sesame oil....thanks

Burger or Hot Dog Buns
These came out just great, I proof the yeast with a little of the warm milk 110*temp mixed with the sugar,butter...about a 1/4 Milk cup to 1 Tbl yeast I used...after about 10 mins then I mixed everything...I proofed for 50mins ,then made the rolls and then proofed 35 mins.I made half hamburger w/sesame seed and half hot bun with poppy seed..I rolled the dough out and used a 32oz tomato can to cut the hamburger buns and the hot dog..I just rolled in a log and cut 6"ea...made about 7 of ea....Best hot dog bun I ever have had...cant get poppy seed buns here in FL where Im at...being from chicago..thats what im use too.

Marinated Flank Steak
Just great...I love this recipe for Fajitas...it was juicy and tender with great flavor...I added 1 lime and 1 tbl molasses...24hr mariade..I like a hint of sweetness and depth..I also live in a condo..cant grill here...so I just browned the meat on both sides about 3 mins ea. and then I added the sliced onions and green peppers to the same pan, after taken the meat out..picks up great flavor from the pits left in the pan...Thanks GUYCON
