Chocolate Peanut Butter Marble Cake

I used melted creamy peanut butter instead of the chips. I also increased the amount to 2 cups of peanut butter, this helped cover the "white cake" flavor. Next time I make this I will reserve about 1 cup of batter and use the cocoa powder to flavor that instead of the butter mixture. I didn't really taste the chocolate so I think this will enhance that flavor more. I made it into a double layer cake with milk chocolate frosting.

Chicken Scampi II

Excellent dish and very easy. I added about a teaspoon of parmesan cheese towards the end of sauteeing. I really enjoyed this dish. I put it over some left over, plain spaghetti and it was a great dinner.

Broccoli with Garlic Butter and Cashews

I loved this side dish. If you are looking for a simple asian inspired side dish, this was a great recipe. I used frozen broccoli and it was just delicious. Super easy and great tasting.

Cheese Ravioli with Pumpkin Sage Sauce

Talk about easy to make! I only used 1/2 C of the water in the sauce, I like a thicker sauce. Next time I would like to use fresh sage instead of ground. I am sure the flavor would be different. Otherwise, I really like this for a quick meal. Maybe I could try butternut squash instead of pumpkin for a different flavor profile.

Raspberry Cream Cheese Coffee Cake

This was very good. I made it for a group meeting at work. One person pleaded with me to make it again, "I will pay you to make it for me." I did not use the almonds or almond extract but used vanilla instead. The filling was very good. Also, I added brown sugar in the crumbled portion. Next time I will add the brown sugar to the entire dry mixture. Also, I only baked it for about 40-45 minutes, my oven can be tricky sometimes but keep an eye on it. When I added the raspberry jam, I used a knife to "cut" it into the cream cheese filling. I will definetly keep this one. maybe next time I will make it with a different berry, just to switch it up a bit. :)

Monkey Bread I

Big hit at my weekly meeting. At first my boss' response was "What is that?" He did not want to try it. Later, he wanted to know what bakery I got it from. I told him I made it and he was surprised. That was all the acknowledgement that I needed. I used jumbo butter biscuits and butter instead of margarine (so much better!). I would like to try it with a cream cheese filling like someone suggested or some kind of custard. Either way, very yummy. Wonder what it would taste like using cinnamon roll dough?

Stuffed Green Pepper

When filling my peppers, I made layers of cheese and filling. This allowed for the cheese to be equally distributed throughout the pepper. I realy like these.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Although I am not a fan of bleu cheese in general, this dish is amazing. Not only was it tasty but quite easy to make. Talk about easy gourmet! Next time I make it I will tray gorganzola cheese or maybe even brie for a different flavor. Also, since I would try it without letting the sauce reduce down as much. Fantastic!

Johnny Marzetti Casserole

Very good. I remember my mom making this when I was little. Next time I will use about 8oz more tomato sauce. I like it to be saucier. Because all I had was macaroni noodles, that is what I used, still good.

Asian Orange Chicken

Good but I will give it another try. I cut the chicken into bit size pieces before I marinated it. Next time I will not shake the chicken in the flour but maybe sift flour onto it. The cornstarch did not dissolve into the sauce as I expected so I will try sifting that into the sauce as well.

Orange Drop Cookies IV

Very easy and quite good. I was a little concerned when I was mixing the batter since the consistency was a little gooey but it was great in the end. the sour cream really makes the cookies light and fluffy. Next time I make these I will use a bigger bowl to mix in, medium was too small. the dough spattered when I mixed all the flour (one cup at a time) in. The icing was easier to work with once it cooled down and became thicker. I will add a little more orange peel zest to the icing next time, just for a stronger flavor. Otherwise, this recipe is a keeper.

Green Bean Fries

very good! I would recommend only frying for a about 30 seconds, otherwise they will burn. Skim the oil often to remove impurities or they will stick to your grean beans. I made sure that the green beans were rinsed with very cold water to make sure that they remained crisp. Great alternative to regualr fries. I served these with turkey burgers stuffed with cheddar cheese.

Grandma's Gingersnap Cookies

Incredibly easy, cracked and baked perfectly. The molasis and ginger flavors were well proportioned. Sometimes one cna overpower the other. This was my first time making gingersnaps and I will definitely use this recipe again.

Amish Macaroni Salad

Very good macaroni salad. The only change I would make for next time would be to dry the macaroni out more or use a different shape, it came out a little watery. Also used Dijon Mustard since it was all I had at the moment. The longer you let it sit, the better. I can't wait to see what this tastes like tomorrow!

Bacon Cheeseburger Cake

Super easy!!!! I work in a restaurant that specializes in Gourmet Burgers and it was a huge hit. When I make this again, I will ice the layers separately to make it easier. The only difficulty I had was getting the coloring right! It was fun to make!

Grandma Ople's Apple Pie

It was okay, the bottom was mushy even the next day. I liked the way the sauce tasted. If I do make it again, I will slice the apples thicker and make a better lattice crust. I guess my preference for the original apple pie will remain. Thanks for something a little different.

Brown Sugar Meatloaf

It was good. I may have cooked it a tad too long but I would like to try it again with another set of people to get a different opinion. I did not have a "loaf" shape dish so I had to use a regular dish. Also, I would add a little more ketchup.
