Married, with no children, work full time, and trying to cook more rather than constantly eating out. I am a restaurant manager and have learned a lot about cooking from the "Big Wigs."
My favorite things to cook
Italian, Mexican, desserts (I would skip any meal for dessert). I am addicted to creamy, cheesy foods. My arteries aren't so thrilled about it!
My favorite family cooking traditions
My grandmother was an excellent cook and I do miss her meals. Just a regular meal was fabulous.
My cooking triumphs
Most of my cooking attempts have proved successful, however I think my husband may be super kind! He eats second helpings, so I guess that is a good thing.
My cooking tragedies
When I was around 10, I tried to make homemade pudding. I used the wrong measuring device and put a quarter cup of salt instead of a quarter teaspoon. It was sooo bad that I buried it in the backyard.

Chocolate Peanut Butter Marble Cake
I used melted creamy peanut butter instead of the chips. I also increased the amount to 2 cups of peanut butter, this helped cover the "white cake" flavor. Next time I make this I will reserve about 1 cup of batter and use the cocoa powder to flavor that instead of the butter mixture. I didn't really taste the chocolate so I think this will enhance that flavor more. I made it into a double layer cake with milk chocolate frosting.

Chicken Scampi II
Excellent dish and very easy. I added about a teaspoon of parmesan cheese towards the end of sauteeing. I really enjoyed this dish. I put it over some left over, plain spaghetti and it was a great dinner.

Broccoli with Garlic Butter and Cashews
I loved this side dish. If you are looking for a simple asian inspired side dish, this was a great recipe. I used frozen broccoli and it was just delicious. Super easy and great tasting.
