Green Enchilada Pork Chili

I used a pork butt roast that I slow cooked the day before. Retain the drippings and separate the fat. (about 2 cups of broth, may need to add a little water) Instead of green enchilada sauce I used red (I've tried both but red is better) I added a can of rotell tomatoes and a chopped up green pepper. This is the closest thing I have ever found to Bennie's green chili in Denver CO. (I omit the cilantro and lime, but I'm sure it would be good)

Italian Wedding Soup I

I made small meatball and baked them on a cookie sheet first (then patted any extra grease off of them) I also added chopped celery and onion as well as poultry seasoning and chicken bouillion to taste. I used one readers suggestion and cooked the orzo separately. Definitely use escarole if you can find it. I've been asked for this recipe by at least 6 people so far.

This cake is wonderful using cream of coconut pudding and 1/2c. up shredded coconut and 1tsp of coconut extract!! It gets great reviews.

These are great. The dough is super sticky, as is normal with this cookie. If you have a problem rolling them in a ball, try chilling the dough first and coating your hands in Crisco.

Mushroom Sauce

Loved this! I usually serve beef tenderloin with a port/shallot/bacon reduction, but this is equally as good!! The only thing I changed was corn starch for the arrowroot. If everyone loves mushrooms, this serves only four people.

Chinese Roast Chicken with Gravy

My entire family loved this. I did put chicken broth in the bottom of the pan and watched it during cooking. I also stuffed the chicken with onions, garlic and diced fresh ginger.
