Awesome! But, I made adjustments for my situation: having a bountiful tomato garden this year and too many canned tomatoes! I used 1 Quart canned tomatoes instead of the fresh. And, I also cooked 1 cup rice seperately and added to the soup at the end....yummy! Thanks for posting your lovely recipe.

This was the best EP I have ever tasted, although I only used 2 eggplants and needed 3 eggs and used fresh basil. I have already passed this recipe on to a friend
