Risotto with Asparagus

I added mushrooms and a little tomato sauce to mirror the flavor in the grilled marinated shrimp that we topped the risotto off with, and it was perfect. Wouldn't change anything, thanks!

Almost No Fat Banana Bread

Super easy and very tasty way to make a healthy version of banana bread. Next time I'll cut down the sugar a little, as it was on the sweet side for my taste. Also, the texture came out a little more spongy than I would have preferred, so I'll have to make adjustments to get it a little heavier. But as-is, this a great recipe that I'll be making again and again!

Peanut Butter Chocolate Cake

I only made the filling from this recipe, so I can't judge the rest of it... However, the filling was PERFECT! Made a store-bought mix and used this filling in the middle, and it turned out great. Just the right amount of peanut butter flavor. Great consistency that works well as filling.

Chocolate Cluster-Peanut Butter Cake

The frosting was way too soft and runny. I should have trusted my instincts when I saw the ingredients, but decided to give it a try. Won't make that mistake again. The flavor was amazing, but it ran down the sides of the cake into a blob on the tray. Might be okay if you use a 9x13 pan and only frost the top, but not for a layer cake.

Capers and Halibut

I had 2 lbs of halibut, so I doubled the amount of wine, added a little more garlic, and used 2/3 cup butter and 3 tsp capers w/liquid. I also sprinkled the halibut with a lemon/dill spice blend and added 2 tsp of lemon juice to the sauce. Turned out amazing!

Slow Cooker Carnitas

Made the recipe as directed, but after shredding the pork, I put it on a cookie sheet and broiled the meat for about 5 min. to get the top crispy. It was outstanding and my husband couldn't stop raving about it. We ate the meat in tacos with corn tortillas with onions, cilantro, and salsa. Even I (who doesn't normally care for carnitas) loved this recipe, thanks!

Easy Hummus

Baked Asparagus with Balsamic Butter Sauce

I only had margarine, so I don't think we got the full effect of the recipe. However, it was still very tasty even though it didn't have the same taste real butter would have allowed. The combination of the butter flavor with the soy and vinegar seemed odd when reading the recipe, but it actually works very well together, especially on the asparagus. Will definitely try again with butter next time.

Slow Cooker Beef Stew I

I would have given this recipe 5 stars simply because it's so easy, but it also required a little bit of adjusting. Added one more can of beef broth to give it enough liquid. Then it also needed to be thickened up at the end for a more stew-like consistency. I also added seasonings, and next time might just add in a packet of beef stew seasonings to keep it simple.

Filet Mignon with Rich Balsamic Glaze

This recipe was good as a guideline, but to prevent having the balsamic overpower the flavor of the filet, I reduced the amount of vinegar and wine when cooking the steaks - down to just a splash of each. I marinaded the steaks in a little worcestershire, soy, and steak seasoning for about a half hour before cooking, and the end result was outstanding.

Prosciutto Wrapped Asparagus

My husband loved it but I thought the saltiness of the prosciutto overpowered the flavors of the cheese and asparagus. Next time it might be worth wrapping bunches of 4-5 asparagus stems instead of just 3 to help improve the ratio of asparagus to prosciutto. But overall a fun side dish with attractive presentation, so I'd definitely try it again.

Herbed Mushrooms with White Wine

I've been looking for a good mushroom recipe and this definitely fits the bill! Followed the recipe exactly and even my husband, who normally won't eat mushrooms, complimented me on how good they were. The dish is impressive enough to serve for guests as well.

Holiday Peppermint Bark

I wanted a dark chocolate layer on the bottom, so I melted milk chocolate chips and spread them in the pan first, then put it in the freezer for about 15 min before adding the white chocolate layer. The layers stayed together perfectly and the final bark got rave reviews! If I had known it was so easy to make such yummy peppermint bark I would have been adding it to my holiday baking tradition years ago!

Brownie Caramel Cheesecake

I made this according to the directions listed so that I could decide where to adjust from there for next time if needed. It definitely needs some tweaking. The brownie layer was thin and got very hard - almost impossible to cut. The cheesecake layer was kind of soft and mushy, not the kind of cheesecake consistency I'm used to. And the caramel layer was a little too runny. Next time I'll double the brownie layer, use less evap milk in the caramel sauce, and adjust the cooking time (less on the brownie, more on the cheesecake). But overall it's a good starter recipe if you do some adjustments. Thanks!

Apple Enchiladas

These not for those without a sweet tooth, but they're oh so tasty! I made about 50% more sauce than the recipe called for because I was afraid there wouldn't be enough. But next time I'll make the standard amount and will spoon it on top of the enchiladas every few minutes to help it soak in before going in the oven. I'd recommend using more apple pie filling - they seemed a little too flat once they cooked and could use a little more apple taste. But overall a fun recipe! Looking forward to making them for my husband's "fiesta" themed birthday!

Cocktail Meatballs

To save time, I used store-bough meatballs, but put them in the crock pot with the sauce from this recipe. I didn't have brown sugar, so I used a little white sugar instead. The sauce was great - a nice little change from the standard bbq sauce and grape jelly mixture.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This recipe needed a little tweaking for our taste, so I changed it up a little... Marinated raw shrimp with the "Grilled Marinated Shrimp" recipe from this site, then cooked it and set aside to add to the pasta instead of using plain cooked shrimp. For the pasta sauce, I reduced the butter by half, used milk instead of water, and added some other seasonings for more flavor. I also added asparagus, which I simply cooked at the same time as the mushrooms in the pan with some butter. The end result was excellent!!
