About this Cook
i started cooking like most folks, once i was out on my home, far from the nest, at college and realized that someone had to cook homestyle or we would starve. one of my fondest memories was thursday dinner with my roomate and 2 of our guyfriends. we would switch each week whose apt we would cook at. one week at the girls, the next at the boys, and we tried all sorts of things. the guys really like the alfredo primavera i made and we even tried our first bite of crawfish that year. nowadays, i cook whatever is fresh or sounds good or both.
My favorite things to cook
anything that anyone enjoys!! i really like homestyle foods, comfort foods, a favorite is a chix pot pie-without the pie that my nana makes. also my grandma was polish so homemade kielbasa, pierogi, gylumpki. i like just about any sort of salads: lettuce, pasta, rice or fruit in the summer. i try to cook with fresh produce from my garden and fields here in wilton. i am always looking for something new and yummy and really appreciate all sorts of foods. i am not in the least a picky eater and that's how i cook. everything and anything.
My favorite family cooking traditions
soups for a snowy day. brisket or pork roast when the family is over on a sunday. my son is 2 and he is starting to cook alot with me and i think he really enjoys it!! it must be rubbing off a bit as emiril's show is one of his favorites now.
My cooking triumphs
fresh chowder from scratch, bbq brisket, i made a wonderful prime rib dinner this christmas eve and i was very proud how well the dinner came out.
My cooking tragedies
fried anything. i simply stink at it. i have decided now frying is only for out to eat. i just can't get it!!!

Mexican Rice II
if you are making with brown rice, add a little more water. i used my rice cooker for this. would be good with some sauteed diced peppers, jalapenos or even corn stuck in it. flavor was good. i usesd homemade chix stock and found it worked great...my rice did not puff either, but was not worried from what other reviewers said...

Chipotle Shrimp Tacos
was delish, but wow are those peppers hot!! (and i cut it back to 1/2!!) would be a great salad topping as well, instead of tuna or chef salad. i am having the salad today with a homemade smokey buttermilk ranch dressing in about 1/2 hr!!

World's Best Lasagna
undoubtedly, one of the best recipes on site. as long as i am making a day ahead, i follow other reviewers and cook the meat, then just mix all the sauce ingredients together. i don't even cook it further. i don't cook the noodles either, i just assemble, cover and leave in the fridge overnight. the next day,i take it out of the fridge for one hr, then cook as directed. unbelieveably good.
