Asian Salad
This recipe is a great start. I am doing weight watchers and tried to use minimal oil and butter. I think the flavor was great with just a few tablespoons of olive oil. Also added mandarin oranges in their juice to cut back on the sugar. I used chicken ramen noodles and the seasoning packets. It was better using nappa cabbage, added snap peas and slivered carrots to get even more veggies. YUM!!

Lemon Square Bars
These turned out nice and I got a lot of compliments. I did pour the lemon juice gernerously and added some lemon zest. Also dusted the tops of them with powdered sugar before serving.

Sweet Corn Cake
Very good! Just what I was craving after eating Don Pablo's sweet corn cake. I entered it in our annual fall cornbread contest at work and won first place. I liked the Mexican corn flour taste and used stone ground yellow cornmeal so it had a lot of flavor and texture. Thank you!
