Best of Everything Veggie Burgers

Reviewed: Mar. 24, 2009
I have not tried this, but, have heard it is a good sub for eggs as a binder in recipes, like meatloaf, so I'm sure it would work here for these burgers as a sub for those that are lacto-vegetarian The Recipe: Flaxseed Egg-Substitute 1/2 cup flaxseed 1 1/2 cup water Directions: Grind flaxseed to a fine powder in an electric coffee grinder. Mix flaxseed and water in blender and blend on high for 2 minutes. Chill for 1 hour to set up. It can be used now, but it has a more egg-like consistency if allowed to chill. Keep refrigerated up to 3 days. Using the Flaxseed Mixture: 1/4 cup of flax mixture = 1 Egg 1 cup of flax mixture = 4 Eggs

Honey Roasted Red Potatoes

Reviewed: Aug. 25, 2008
Great! I added less butter and more honey, not too sweet at all! I used real yellow mustard, since I didn't have the dried mustard on hand. Cooked in my oven for almost an hour and then broiled them for a few minutes to carmelize the honey and crisp up the potatoes a bit. Turned out great! Served these with 'Alice Chicken' from this site and sauteed zucchini and yellow squash. Not a leftover at all! Will be using this again.

Alice Chicken

Reviewed: Aug. 25, 2008
VERY DELICIOUS! and SOOO easy! I grilled my chicken rather than broiling it, and topped with cheese and bacon, then broiled it to melt the cheese. Cooked the bacon, and then added the mushrooms and cooked them in the bacon remains, rather than butter. Served with Ken's Honey Mustard..YUMMY! Will be making this again and again!

Homemade Black Bean Veggie Burgers

Reviewed: Aug. 20, 2008
VERY yummy!! Loved this recipe, but I added a few things to the burgers. I added a cup of cooked brown rice, doubled the egg and beans, added about 3/4c mozzarella cheese and a 1/2c sliced mushrooms. I used the bread crumbs and added until moist. It made 6 large patties. I topped these with Swiss Cheese and used whole wheat buns. So good!

GREAT and YUMMY recipe! I used the ideas of cooking the chicken first and then letting it warmed in the oven while I made the sauce. I poured the sauce over the chicken just before serving. Made brown rice and veggies to go along. Good meal..just what I've been looking for. Thanks!

This recipe was so easy and quick for my sweet tooth!! I doubled the recipe and although it sounds quirky, I added Vanilla Coffee Creamer as it was heating. It added a bit more sweetness, and a great creaminess. Thanks for the recipe, and I'm looking forward to making it again!

This was wonderful! I changed/added a few things as others suggested. I used white wine and heavy cream intead of water and I also used 8oz cream cheese instead of 3oz. I also added a can of diced tomatoes, with added some color to the dish. It came out great! Thanks for the recipe!

Raspberry Cake

Reviewed: Aug. 25, 2007
FABULOUS! I made this with unsweetend frozen raspberries, and just added two tablespoons of sugar. I made this into 8 jumbo cupcakes, and filled them with a homemade cream made from lemon curd and whipped cream. I iced them with homemade buttercream frosting. My grandmother loved them for her 88th birthday. This sounds rich, but the lemon cream is suprisingly refreshing! Great basic recipe!
