Amanda's Potatoes
Amazing!!!! I sliced my potatoes really thin. I agree - you don't need the sugar for the onions, just carmalize them up nicely. I put a little garlic salt in between the layers along with the rosemary. I put some grated parmesan on top for a little crunch. Can't wait to make again - I think I'll try with half and half to cut the fat a little.

Spicy Black Bean Potato Salad
I thought this was a fantastic variation of potato salad. I used 1 cup mayo and 1 cup light sour cream and about 3T of cajun seasoning. I didn't have green onions, but everything else was pretty much the same. It would be good with some corn too!

Garlic Mashed Potatoes Secret Recipe
Scaled the recipe to 10 servings. I agree with other reviewers - they were WAY too dry. I added almost a cup of milk to mine! That didn't make them creamy, just moistened them up. After that they were nummy!
