Wheat Germ Whole-Wheat Buttermilk Pancakes

These are fantastic! Buttermilk is a magic ingredient that be healthy, without tasting healthy. We've made these once a week since finding the recipe. Good stuff!

Grandmother's Buttermilk Cornbread

Glad you are all enjoying this recipe. Just wanted to mention a few things in response to some reviews. First, I mix all ingredients in the pan I melt the butter in. Less dishes. :) Second, I often use whole wheat flour to cut sweetness and make it a tad more healthy. Third, it freezes fabulously. I always make a double batch, remove one from the pan after cooling, wrap it up and pop it in the freezer. Thanks for all the rave reviews! 3/20 Based on some reviews I've read, I want to clarify something. I use a regular pot to melt my butter in. After the butter has melted I proceed with adding the rest of the ingredients in that same pot. I do NOT get a separate bowl for mixing in. After all the ingredients are mixed in the pot I pour the batter into a baking pan. I do NOT mix everything in the pan I'm baking it in. I do NOT keep the butter and sugar mixture out when mixing the rest of the ingredients. Hope that helps. :)

Gingersnap Pumpkin Pie

Really tasty! I appreciated the review which mentioned the filling would still be watery, as I would have let it overbake otherwise. At the suggestion of other reviewers, I also added ground cloves, in addition to the other spices. Anyway, my crust was a little hard on the bottom edge, where the crust bends up the sides, difficult to cut through and bite. Otherwise, it was great. Love the combination of flavors. Will definitely make again!

Smoked Salmon and Dill Vegetable Bites

All I have to say is yummy, yummy, yummy!! We used fresh parsley, rather than dried. Next time I'd like to try it on something non-veggie, like crackers.

Jalapeno Cheese Squares

We felt pretty neutral about these, although people at the party we took them to said they loved them. They tasted a little flat, no kick from the jalapenos. Next time we're going to try it with diced green chiles. Definite potential.

Baked Spaghetti Squash Lasagna Style

So good!!!! I tweaked it a little by using 1/2 an onion and some dried minced onion (not 1 whole onion), 1 drained can of diced tomatoes and 1 can tomato sauce (not 2 cans of stewed tomatoes), italian (not vegetable) boullion, Italian seasoning, (rather than basil) and some cottage cheese. I baked it in an 11x7 pan instead of the shells. It was fabulous!
