Easy Breaded Shrimp

Super easy! Super tasty! Even our shrimp hating and our alleged vegetarian kiddos loved it. :) We added some brown sugar & Tony Chachere's Original Creole Seasoning to the bread crumbs. Yum!

Mustard and Veggie Pasta Salad

This was a total flop! All you could taste was the Dijon. Perhaps the brand we used, Beaver, is just too strong. I had to rinse all the salad out in a colander and then just squirt some Italian dressing on it. The veggie and noodle combo was fine, but the dressing ruined it all.

Heddy's Black and Red Bean Soup

Easy peasy! And tasty too! I made the chili powder version and really enjoyed it. I used dried beans I'd previously cooked and frozen. I'll also make a shameless plug for my Grandmother's Buttermilk Cornbread recipe on here and tell you that it is great served with this soup!!

Indian Chapati Bread

It was Foreign Food Night at our house and we were eating Kenyan food. Every Kenyan food list I saw listed chapati as a common food. It was my first time eating it and we all liked it. Super simple!!

Refried Beans Without the Refry

Easy and tasty! I left the jalapeno half intact and removed it after cooking. Next time I will dice half the onion and blend it in at the end for a little extra flavor. Jumping back to say that I made these differently today and still love them. I did a double batch with half black & half pinto, one diced onion, no jalapeno ... and they're wonderful!! This is such a good recipe and an easy one to tweak.

Buttermilk Cinnamon Bread

Oh my goodness!! This is absolutely delightful. I made it exactly as the recipe said to and it's perfect. Well, not exactly. I sprinkled the greased pan with some of the cinnamon/sugar mixture. Yummy, yummy, yummy. I'm printing this one out for my recipe file.

Classic Macaroni Salad

I used whole wheat noodles. I also took one reviewers advice and kept my cooked noodles and my "dressing" in two separate containers overnight, so as not to have the noodles suck up too much moisture. I thought it was pretty good, but not many people at the potluck I was at actually ate it. Maybe the noodles scared them? I'll do it with regular noodles next time and see if I get a different response.

Black Bean and Couscous Salad

This was delicious! Some ate it plain, others with sour cream in a tortilla, others the next day as leftovers. It was good every way we ate it. I cooked my own black beans instead of using canned ones. Next time I will add more lime juice and cumin as you could hardly tell there was any in the first place. Even without those flavors being strong, it was still tasty.

Lindsay® Olive and Brie Pizza Pie

Lots of potential. Our only complaint was that the main thing we could taste was the dijon ... and we only used about half of what was called for. Perhaps we've got a super spicy brand at our house. We're going to try it again with a different mustard. Used one reviewers suggestion and exchanged basil for oregano.

Bacon Ranch Pasta Salad

This was just ok. My main complaint is that it was so salty!! The mix, olives, and bacon was too much I guess. I will definitely try it again, but with a few changes next time. First, I used Hidden Valley's Buttermilk Ranch dressing mix, as that's what I already had at home. Next time I'll use regular ranch mix. I will probably also cut back to two tablespoons of ranch mix. If it isn't "ranchy" enough, then I'll mix some with a little milk and add it later. It was good enough to try again, but not as tasty the first time around as I'd hoped.

Slow Cooker BBQ Pork Chops

This was easy and tasted good. Not earth-moving or anything, but a dish we'll make again. I used KC Masterpiece Original and added about 1/3 cup water and 1/2 cup finely chopped onion.

Peanut Butter Quesadillas
