I love the many foods of Texas and Louisiana. My natural love is smoking briskets. Second is Tex-Mex, followed by Cajun/Creole cooking.

Texas style BBQ Brisket, cheese enchiladas, and ribs.
My favorite family cooking traditions
Southern. I lived up north for a few years and they did not know how to use garlic and onions. It's great to be back down South again.

I have been experimenting with the wonders of Pressure Cooking. It saves a lot of time.
My cooking tragedies
Cooking always seems to go wrong when the phone rings. It messes up the internal clock in my head and breaks the rythm in the kitchen.

Angel Hair Pasta with Garlic Shrimp and Broccoli
I increased everything by a little bit because I had extra shrimp. Next time, I would increase the sauce more, maybe even doubling it, but it was great the way it was. I did add a little more garlic. My kids loved this dish too!

Filet Mignon with Rich Balsamic Glaze
I thought it would be sinful to cook a filet mignon in a pan, I prefer grilling outdoors, but hey... my money was not wasted. This was great! The only change I made was adding Montreal Steak Seasoning along with the fresh cracked pepper. I also wrapped bacon around my filets. It was easy and fast, and perfect for Valentines day. My picky 12 year old even ate it.

Tantalizingly Tangy Meatloaf
WOW! I love meat loaf, but was afraid to try it without insulting my wife's family recipe. It left her speechless too! Now I love hers and this one. They are both very different, so they are not competing against each other.
