Salsa Chicken
Very good! I did what another reader did "cut the chicken in large strips and coated with the taco seasoning. Then mixed 1C Minute Rice with 1C water, the salsa, about 1C of corn, a chopped jalapeno, and a dash of cayenne. Poured the rice mixture into the pan, then topped with the spiced chicken. Baked for 35 minutes, then topped with 1C crushed tortilla chips and a mixture of Monterey Jack and cheddar cheese, and baked for 5 minutes. It was SO good. Served with sour cream on top."
I woulld add just a little more salsa next time.
