Sweet Corn Muffins
Excellent muffins. This will now be the recipe I turn to for sweet corn muffins. I used melted butter in place of the shortening and let the batter rest 15 minutes prior to filling muffin tins. Yielded 6 regular size muffins and 24 mini muffins.

Black Bottom Cupcakes I
A fabulous cupcake! I cooked for 20 minutes as suggested by others. I will definitely make again, but I will not add chocolate chips to cream cheese mixture. I don't think they are needed, and will save them for another cookie recipe!

Easy Devonshire Cream
Easy and delicious, great as noted with scones and fruit. I took the suggestion of another user and increased the cream cheese to 8oz. Creamy, and wonderful.
