About this Cook
I grew up in a Southern family, with a mom and grandmother who loved to cool. When I finally went to live on my own, I discovered how much I enjoyed cooking, especially for other people. Cooking is my stress relief!
My favorite things to cook
I absolutely LOVE Mexican food. It's what we ate all the time when I was growing up. I make a really delicious Mexican Lasagna. I also enjoy cooking (but especially EATING) Mediterranean food.
My favorite family cooking traditions
My mother's cornbread dressing on Thanksgiving! Even though I haven't been home for Thanksgiving in probably ten years, I can still picture my mom standing over a big Dutch oven on the stove mixing up her dressing. I haven't attempted it yet myself, because I know I can't top it.
My cooking triumphs
I can't think of one specifically, but anything my two small children will eat and say, "You're the best cook in the whole world, mommy!" They especially like my cheese omelettes.
My cooking tragedies
I had a recipe for eggplant that was layered with pesto. It turned out way too salty, and I had to throw it out. It was AWFUL!

Bow Tie Pasta with Sausage and Sweet Peppers
This was delicious! It was so easy to make, and my husband, children, and I enjoyed it. I did add about a teaspoon of minced garlic and topped each serving off with shredded Asiago cheese, but it would have been wonderful without. Thanks for sharing!

Curried Chicken Rice Soup
YUMMY!!! This was so good. I wish I'd added a little more curry. Followed the recipe as written, and it was wonderful. So creamy! Thanks for sharing.

White Velvet
You MUST add vanilla to this. Also, try topped with thawed sweetened red raspberries for a Red Raspberry Russian Cream dessert. It is FANTASTIC. My mom used to make it for special occasions only, and now I make it for my kids.
