Ginger Scallops

Gah, my sauce curdled so I blended it - but then it separated. I did use half and half instead of full cream so maybe that's what happened. However, it was still very tasty.

Double Layer Pumpkin Cheesecake

My first attempt at a cheesecake and wow. Since I had a 1/2 extra block of cream cheese in my fridge, I added that too (for a total of 2.5 blocks). I cooked it for 43 minutes and it came out perfectly (no cracking). Delicious result even without whipped topping.

Banana Banana Bread

Pleasant basic recipe. I substituted 1/8 cup ground flax for flour and added 1/2 cup chocolate chips and a heavy splash of dark rum. Used three large bananas (previously frozen). Baked for 55 minutes.

Makes a hearty, sweet cookie. Our dough made around 60 2" treats. We added scor bits and used butterscotch chipits. Also substituted toasted almond slices for pecans.

Roasted Red Pepper Lasagna

For all the work that went into this one, I was expecting "more". Flavour is mild and mine seemed to be on the runny side (even after I let it rest 15 minutes). I used whole wheat noodles and even extra fresh parmesan.

Smoky Four Cheese Macaroni Bake

We were impressed. We used long macaroni noodles (made serving a bit more tricky), a little less cream cheese (ran out), and skipped both the swiss and parm on top (seemed cheesy enough). The onions and liquid smoke were great additions.

Seared Salmon with Balsamic Sauce

An ok recipe - probably higher if I was a more patient cook. Be sure not to turn the fish more than once or it will fall apart. I was a little surprised at how much oil, etc. was left in the pan after I removed the cooked fish (1/2 cup?). I drained some of it before adding in the sauce. I also added a touch of cornstarch to thicken.

White Chocolate Pumpkin Cookies

I tried using milk chocolate chips - but the white chocolate is truly the best match. Also, I highly recommend eating these frozen - they don't freeze solid due to the cake-like properties.

Spicy Sweet Potato Soup

Great recipe - and a cinch. I sometimes omit the creme fraiche but it is a nice touch. I've also substituted almond butter for peanut butter which works well too. And I always leave the skins on the potatoes for added texture and fibre.

World's Best Scones! From Scotland to the Savoy to the U.S.

I soaked my raisins in rum for a couple of hours which resulted in a hint of rummy flavour. I also tossed in a handful of toasted almond slivers. Otherwise, I followed the recipe but after I portioned the scones out on the sheet, I covered in plastic and froze. The next morning, I baked them for 40 minutes and they turned out just great.
