Szechwan Shrimp
This was really quick and delicious recipe. I like veggies to predominate in my stir fries, so I cut way back on the shrimp and added broccoli, red bell pepper, snap peas, and carrots. It came out great, but next time I will cut back on the corn starch.

Vegetarian Tortilla Soup
This recipe was a little disappointing to me. It was okay, but it tasted a like a good-quality canned soup, not a homemade soup. I think this happened because there are so many canned ingredients and the peppers and onions are frozen. Next time I will use fresh onions and peppers instead of the stir-fry mix. It definitely has potential, but needs some tweeking.

Santa Fe Veggie Quesadillas
I added cilantro to this recipe, which was a very tasty addition. This is a great way to cut down on the cheese in the typical quesadilla. (I used less cheese than was called for.) Very fresh tasting and reasonably healthy.
