Banana Nut and Ginger Bread
I had a bottle of really dark beer I needed to use - one sip and I knew I wasn't going to drink it. This recipe was a great find!! I always have a few bananas in the freezer and I have all the spices. I didn't have dates or raisins so I just added walnuts. I also didn't frost it. I still loved it!! I plan to make this again - I'll take it camping and have it in the morning with butter and hot tea.

Chocolate Chip Orange Zucchini Bread
This was a very good recipe. It is 4 and 1/2 stars. I used it as a base and made the changes based on other reviews and personal preferences. I omitted the choc chips since I'm not really a fan of them in breakfast foods. I sub'd apple sauce for 1/2 the oil, used 1 cup splenda and 1 cup brown sugar instead of all white. increased the cinnamon to 1 teaspoon, and used 1 cup white wheat flour instead of all white and added 1/2 tsp orange extract. I also baked it in a bundt pan. It was done in 48 minutes. A very good zuke bread - love the orange flavor.

Lemon Cake
Made this for Easter. Used lemon cake mix and sugar-free instant lemon pudding instead of the vanilla as suggested by others. Also used light cool whip. Beat it for 4 min. as directed. Baked it in a 10x13. Super easy, and relatively light. All loved it, especially the younger ones. Served it with fresh strawberries.
