Shredded Beef Enchiladas

Great recipe. Did cook the roast in a crockpot all day, but that was really the only change. Made a huge batch which was a great surprise. It was a hit with DH too. I might try them with chicken next time. Definitely a keeper.

This was okay. I did use fresh cherries because that's what I had. I feel like it needed something more. Maybe shallots chopped up into the pre-made dressing.

Southwestern Bean Soup

It was pretty good. I used real garlic instead of the powder. I thought it was a tad bland even with using two cloves of garlic. I added some cumin and chili powder and that really helped. I think it would be really, really good with some fresh chopped cilantro on top. Thanks for the easy recipe.

Very easy! Very tasty. I will make this often. I was out of sesame seeds so I put kosher salt, pepper, and rosemary on them. Yummy!

Simple But Awesome Lemon Pepper Pork Chops

I was a little nervous when I saw the great range of reviews for this recipe. My husband encouraged me anyway, because he loves lemon pepper. This recipe was awesome. The meat was so tender. I added extra salt and pepper to give it a kick as well as dried basil. I also eyeballed the amount of olive oil and butter needed, cutting it drastically. There was still alot of juice, but every time I've cooked with foil packets you get that anyway. My husband said its a keeper!
