Corn Chip Salad
A big winner!! I doubled the recipe for a family party and everyone loved it. I served it with Doritos and Fritos so people could choose whether or not to add the chips. Serve guacamole, salsa, etc. as toppings if desired.

Spinach and Sun-Dried Tomato Pasta
I made this for a family party and it was a new favorite! Everyone raved about it, including my father-in-law who is a tough critic -- he worked in an Italian restaurant in NY when he was at school!
