This was very tender and very moist, but slightly bland. I would probably put a rub on it next time to add flavor. I also did not cook it as long as this said. The meat was beginning to dry out, so I sliced it up and let it cook in the juices for another hour.

Cajun Seafood Pasta

We made this last night. It was glorious. I did tone down the crushed red pepper because we are weaklings in the heat category. We also changed up the seafood, by adding clams, more shrimp, and more scallops. This is definitely a keeper.

Fiesta Chicken Soup

This soup was great after I added some things to it. I increased the amount of the rice and water and then added jalapeno peppers to it. It helped spicy up the dish.

Sweet N Sour Meatballs

I tried this recipe because it reminded me of something my mother made before she passed away. This recipe was very similar to what she fixed. I liked everything about this recipe except that it recommends to much corn starch. The sauce is too thick for my personal taste. Besides that, I love this recipe.

Unstuffed Cabbage Dinner

Deep Fried Oreos®

I fixed these last night and they were pretty good. They had a funnel cake taste to them. One thing is they have to be eaten right away when they are still warm. They were not very good once they cooled. I would still fix them again.

Amish Breakfast Casserole

This is a great recipe. I made this for a baby shower I catered and everyone loved it. I then made it for my family, who do not like egg in their casseroles, and they devoured it. The only change that I made was the suggested one of using sausage instead of bacon. The second time I made it, I used both. This is a definite keeper.
