Mild Coconut Tofu Curry
Great recipe. We left out the onions, because I don't like onions. Also the lemongrass, because our little local grocer doesn't have any. We didn't really pay much attention to the proportions, which was fine. Also, there was no rice on hand, so we had it with cous-cous, which was very good.
Only the second curry we've made, and it wasn't very hard - so try it!
