Whole Wheat Sweet Potato Muffins
Very moist and delicious. I used a full cup of orange juice concentrate instead of honey for a citrus twist and it was perfectly sweet enough - very good for breakfast. I've also baked this batter in a 8x8 glass pan for about 25 min. Yum!

Banana Banana Bread
You could cut down on the sugar in the overall recipe. But to make a really amazing brownie-like chocolate marbled banana bread, melt 1/2 c. semi-sweet or bittersweet chocolate chips and mix 1/2 or so of the batter to make chocolate banana bread batter. Marble and bake like usual. Scrumptious
