Baked Potato Soup
This is a little spicy - and so good! Since the soup was a more watery than we would have liked, we mixed the cheese and bacon into the soup and then topped it with a little more cheese and the parsley (we didn't have fresh parsley so we used dried and it was still yummy). Since the potatoes were pretty chunky, we mashed them a bit with a potato masher. Other than that, we followed the recipe exactly. We'll always double this recipe ... we can't wait to have it for lunch tomorrow. Even the kids loved it! :-)
