Mexican Bean Salad
Thanks Karen!! This is a definite 5 star recipe. I'm a fussy eater and don't even really care for beans but this was super. The dressing really makes it. I'm making this for the 3rd time in two weeks, my husband keeps asking for it. I used yellow, red and orange peppers for color and red onions. I followed the recipe to a "T" and it was fantastic. The 2nd time I reduced the oil a little because I'm on a diet. My friend loved it and we've been passing the recipe on to everyone who tries it. Try to use fresh fruit and don't skimp on the lime juice!
