Chicken Enchiladas I
very good enchilada recipe to start from.I boiled my chicken then shredded with a fork,I also cooked the onions in alittle oil then added the chicken to the skillet along with all the seasonings,1/2 pint sourcream,2 small cans chopped green chilis,about 8oz. of hot salsa and about 2 cups shredded sharp chedder cheese.I did not add water and I did not use the tomatoe sause or the green peppers,was not watery this way.I also used green chili enchilada sauce instead of taco sauce and I used corn tortillas and shredded four cheese blend for the top.I topped each serving with shredded lettuce,sour cream and black olives.Served with spanish rice.My family loved this.very good and very filling

Smothered Meatballs
This is a good recipe.I just put my own little touches to my families taste.I did not have any bread crumbs so I made my own bread crumbs by toasting a few slices then placing them in my chopper and just added some italian seasoning.I also added worchestershire sauce and garlic powder to the meat.For the sauce I used 3 cans of cream of mushroom,1 large can sliced mushrooms,about 1 1/2 cups milk,1 tbsp kitchen bouqet and then some salt,pepper,onion and garlic powder.After baking the meetballs for about 30 min. I used paper towels to remove drippings off the meatballs then I placed them in a 9x13 dish,completely covered them with the sauce and baked about 45 min.Served over egg noodles. Turned out really good I will be making this again and again.

Bill's Blue Cheese Dressing
My husaband is the one that likes bluecheese,he loves this recipe and says he does not what any other bluecheese.It is very easy to make aswell.
