About this Cook
I'm an avid Husker football fan who loves to cook. I tend to view most (but not all) recipes as general guides & like to take recipes & make them my own by varying the ingredients. Sometimes this works, sometimes I end up dumping the food onto the compost heap!!
My favorite things to cook
Anything that my husband & toddler ask for seconds on!! :D
My favorite family cooking traditions
My mother loves to cook & she was the one who taught me how to cook & I'm teaching my children how to cook. It's ok to know HOW to get the food, but it it ain't fit to eat, well then, ya got yerself a leeetle problem! LOL!
My cooking triumphs
Made microwaved bread once & only once as a teenager. Mixed it up somewhat like regular bread, but "baked" it in my mother's microwave. Can't remember the ingredients or times, etc. to this day!
My cooking tragedies
Was a newlywed ... 1st EVER Thanksgiving meal that I cooked totally on my own ... turkey blackly burnt on the outside, bloodily red raw on the inside. Followed mom's "advice" & cooked turkey at 450ยบ for 1 hr. Found out mom was joking. :-} Thanks mom! :P

Pepperoni Stuffed Zucchini
I did not like this one bit. I used high quality, low fat pepperoni & cheeses, but it still turned out very greasy. This recipe requires some major tweaking before I'll try it again.

Buttery Rolls
Very versatile recipe! I love the buttery taste of these, especially when fresh out of the oven! These freeze very well. I've even par-baked them, popped them into the freezer, then thawed them back out & finished baking them. Not soggy at all! I've made this about 5 times & made a modification with the most recent batch. I added approx 1 1/2 tbs of garlic powder & 2 tbs of minced garlic to the liquids & reduced the milk about approx 2 tbs. After the dough cycle was over, I rolled out the dough in a flour & cornmeal mix & made twists. I then put them on a large baking sheet, spacing them about a 1" apart. I let them rest for 15 min & baked them as the recipe suggests. These were the best garlic sticks I've ever made!!
