Catherine's Spicy Chicken Soup

This soup was great. I served it with the southwestern egg rolls on this site and it was a lovely meal. It makes a TON of soup though. I gave some away, froze some, ate some and still have a lot left over! Thanks!

Southwestern Egg Rolls

YUMMY! I made these last night and my boyfriend went on and on about them! I did use eggroll wrappers instead of the tortillas like some suggested. I think I will try the tortillas next time - the eggroll wrappers were a bit chewy I guess would be the word. But they were still so good! I didn't freeze them b/c I planned on baking them so they would be a healthier meal. I refrigerated them for several hours and then baked them. I served with Catherine's spicy chicken soup and Amy's cilantro cream sauce (both from this site). Thanks for the recipe!

Rich and Creamy Tomato Basil Soup

I told my boyfriend that we were having grilled cheese and tomato soup for dinner and he told me he would find something else, that he had never had any homemade tomato soup he liked, just "Campbells". Well, he had two servings! It was so yummy! The two kids liked it too! I was lazy, so I just cup up the tomatoes - no peeling or seeding and it was still wonderful! Thanks for this recipe!

Cha Cha's White Chicken Chili

This was wonderful! I used a 7 oz. can of chiles and just diced up about 8 jalapenos so it wouldn't be too spicy for my daughter. I omitted the cheese so it would be healthier and garnished it with fresh cilantro! We didn't miss the cheese. It was very fresh tasting and we will definately make it again. Thanks!

Caribbean Holiday Shrimp

This was an extraordinary break from boring! These shrimp were delicious! Very fresh and light! My husband and 5 1/2 year old loved them too. I did not have enough fresh ginger so I used 1/2 fresh and 1/2 bottled. Very yummy! I will probably make again this week! Thanks Sue!

Creamy Chicken and Rice Soup

This recipe was easy and very yummy. It is a meal in itself. My husband wouldn't shut-up about how much he liked it! I did not have celery, so I made it without and it was still outstanding! Thanks!
