Parmesan and Basil Chicken Salad
This was great, hubby rated it a 4, 'just to leave room for incredible things' in case he has something better in the future. I used this as a base and played w/it some. I rubbed chicken w/olive oil, garlic, salt & pepper and grilled it. While grilling I chopped up the basil and mixed w/the mayo and parmesean to taste. Sliced the chicken and mixed it while HOT and served on grilled buns as a hot dinner rather than as a cold lunch. Side of potato chips made for a nice, easy to prepare dinner, w/some cold salad left over for lunch the next day. Very nice, will make again.

Fish Tacos
Loved this. I don't have a deep fryer, so simply fried it in a pan with a lot of oil.. a little messy that way, but definately worth it. Sauce was delicious. I left out the capers, my husband has a strong aversion to them. I thought it tasted great withouth. Don't skip the cabbage, it doesn't add a lot of flavor, but it adds in a great crispy crunchy texture that really gives this taco a nice mouth feel. I want to use the batter to make onion rings next time, I will plan to have some available. Delicious.

Grilled Tequila-Lime Shrimp
This was great. Marinade didn't overpower the shrimp, but still added a nice flavor. Great for a light summer bbq, chips and guacamole for an appetiser and a nice margarita on the side to compliment. I'll be making this again and suspect it will be a frequent meal in the hot summer Texas heat!
