Meringue Mushrooms

Two thumbs up! Fun to make with kids, look very cool, and pretty yummy too. I didn't have any confectioners coating on hand, so I used hazelnut spread (ie Nutella) and piped the tops with plenty of it so that they almost had a filling. If you want to use the leftover egg yolks, I highly recommend the Amazingly Good Eggnog recipe on this site!

The Best Rolled Sugar Cookies

Reviewed: Dec. 9, 2009
Awesome recipe. I followed other reviewers suggestions and added another cup of sugar and another teaspoon of vanilla. Will make this again. No reason to keep searching for another sugar cookie recipe. Does make alot of cookies though. My kids gave out of steam decorating the cookies because there were so many.

Sugar Cookie Icing

Love the way it is hard and glossy after it dries. Proportions of recipe are way off though. I needed about a tablespoon of milk and corn syrup to get a frosting consistency.

Colored Sugar

Awesome! For even better results, use turbinado sugar (ie Sugar in the Raw) which can probably be found at your grocery store. It is a courser sugar just like the store bought colored sugar sprinkles.

Pecan Pie V

Awesome recipe. Absolutely delicious and no corn syrup for anyone trying to make a ... ummm ... healthier pie. :) Unlike others, I found my pie to be a bit overdone after 10 min @ 400 and 30 min @ 350. Pie is done when internal temp reaches 200 degrees and mine reached 220 degrees after that time. Will bake for shorter time next time.

Good, solid recipe. Can never have too many panko recipes. Served with a simple tonkatsu sauce (1T each of soy sauce, Worchestershire sauce, ketchup, and sugar).

Kalua Pig in a Slow Cooker

Wow. Incredibly delicious. Almost addictive. Couldn't be more simple. I didn't read the recipe carefully enough, so I didn't have Hawaiian sea salt, only regular sea salt. With the substitution, it came out just a tad salty. Will try Hawaiian sea salt next time.

Good solid, simple recipe. Will make again. I ended up adding a little more vinegar and a little salt to suit my tastes.

Shrimp Scampi Bake

Reviewed: Aug. 27, 2009
Simple and yummy! I reduced the cook time to 8 minutes and that was definitely sufficient. The sauce is delicious served over pasta. I'll definitely be making this again. Husband said it was restaurant quality and worthy of serving to dinner guests.

Barbequed Marinated Flank Steak

Made as written and it was very good. Next time added 1/2 teaspoon liquid smoke, 2 teaspoons kosher salt, and doubled the vinegar. It was amazing. I have no need to search for any other steak marinade recipes!

Outrageous Caesar Salad

Reviewed: Jul. 24, 2009
I thought this was good. I loved the strong flavors. Although I prefer a creamier caesar salad, so I'll probably hunt for a new recipe. The croutons were okay, but I prefer making them on the stovetop with oil, salt, and garlic. Also, for my kids and mom who don't like strong flavors, I added a healthy amount of mayo and parm cheese.

Peach-a-Berry Pie

Reviewed: Jul. 16, 2009
The flavor was good. The consistency was very soupy (I even used fresh peaches, drained them, and added 2 teaspoons of corn starch). The pie crust on top just didn't work out very well for me. It crumbled all over the place as soon as I placed it on top.

Pretty Chicken Marinade

Reviewed: Jul. 5, 2009
This was a really great marinade with a unique flavor. I used regular soy sauce and I did not find it too salty. I really wanted to follow the recipe as exactly as I could, but I just could not bring myself to use 2 tablespoons of liquid smoke. Most marinades I've made before have called for about 1/2 teaspoon. I used 1 tablespoon. I will probably use 1 tablespoon if I make it again.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jul. 2, 2009
I had previously given this recipe one star. I made it again and realized that I had used 3/4 STICK of butter instead of 3/4 CUP of butter. This time, they turned out wonderfully. I took them out of the oven after 15 minutes. At that time they looked seriously undercooked, but after they cooled they were perfectly soft!

This is "the cookie recipe" from now on! Yum! I was careful not to pack the flour. Mine looked underbaked when I took them out at 10 minutes, but they were perfect after they cooled off!

Pesto Cheesy Chicken Rolls

Reviewed: Feb. 5, 2009
These were really good, especially for how simple they are. I'd give it 4.5 stars if I could. I took the advice of another reviewer and coated in egg and bread crumbs. It made a nice brown crust. Next time I will add some salt and pepper to the bread crumbs. The chicken definitely needed a little salt.

Plenty sweet with no sugar at all. But I sprinkled a little brown sugar over the top to make it extra-sweet. I also used half the cinnamon.
