Chocolate Peanut Butter Bars IV

Based on other reviews I cut the butter down to 3/4 cup and it was plenty. Next time I would increase the amount of chocolate and use a bigger tin - I found the base was too thick. Great taste though.

Grandma's Carrot Cake

Wow grandma must need to go on a diet - this is so full of fat and suger! But it tastes great, I made it exactly as the recipe states except used 1/2 cup dessicated coconut instead of 1 cup flakes as I couldn't find any. Also it needed about 15 minutes more cooking time. Got lots of compliments on this.

Tofu and Rice Stuffed Peppers

I made a few additions as the mixture needed more flavour - used more garlic, added a handful of fresh shredded basil, chili flakes and 1/2 cup white wine to the tofu mixture while it was simmering. I mixed the rice, tofu mix and marinara sauce together and then put it into the peppers, and topped with cheese. There was lots of filling, probably twice as much as I needed - maybe my peppers were too small. Made a great vegetable side dish that I served with baked salmon fillets.

Chocolate Mousse I

Very good - I used Tia Maria as the alcohol, and 72% dark chocolate. It took quite awhile to blend the egg yolk/chocolate mixture with the egg white, and there were a few little lumps of chocolate left, but it tasted great. I served it in glasses with a side serve of vanilla bean ice cream to cut through the richness - guests loved it.

Roasted Rack of Lamb

This was great but needed longer cooking time than specified - mine needed about 20 minutes for medium rare, and my oven is pretty hot. I guess it depends on the weight of the meat. Also I forgot the dijon mustard in the rush of preparing the lamb in the middle of the dinner party, would have been even better with that.

Grilled Spicy Lamb Burgers

These were fantastic - I followed the recipe exactly. My husband thought they were too "lamb-y" and he grew up on a sheep farm so that's saying something, but they were great for me. Definitely a strong lamb taste so if you're not into lamb, give these a miss or use different meat.

1-Pot, 3-Bean Chicken Stew

A really good, tasty, easy recipe. I didn't have parsley and used spicy italian sausages instead of smoked chicken, also used a chicken stock cube and more wine instead of a can of chicken broth. Oh, and it made a lot so my pot was too small, I had to transfer it all to a large casserole dish and bake it (covered) for an hour.

Roast Sticky Chicken-Rotisserie Style

Excellent excellent chicken! Will make this again and again. So easy, so moist, so tasty. Made to recipe except halved salt and didn't have any onion salt. Also guests were late so cooked for almost 6 hours instead of 5 - didn't seem to matter.

Easy Caramelized Onion Pork Chops

I should have read the reviews before I made this - too much water. But tasted great and really tender meat. I added an extra onion, used only 1/2 tsp salt, and added red wine vinegar to the water. Really good easy meal.

Mou Shu Pork Wraps

I don't know what Mou Shu pork is supposed to taste like, so can't say if it's authentic or not - but I enjoyed this, it was tasty but there was too much sauce - I'll halve it next time. I didn't bother with tortilla wraps, just served it as a stir fry and it was great. Used less bean sprouts than the recipe specified, will add more next time.

Lentil Quiche

Delicious - I added garlic and used an extra teaspoon of Italian seasoning. Cooked the onion and garlic in with the lentils and then mixed everything else in when they were done. Also used a few different types of cheeses that I had in the fridge.

Southwest Chicken

I used a 14oz can of diced tomatoes and added a few spoonfuls of sliced pickled green chillies. Also used more corn and 1tsp cumin, and added 1 cup quinoa. Simmered with lid on - great taste but chicked was a bit overcooked. Next time will add more cumin and also cayenne, and add the chicken later so it doesn't get so dry.
