About this Cook
I'm an Australian living in the US with my 2 sons and husband, after 13 years of living in Singapore.
My favorite things to cook
I'll try most things that involve using all natural/from scratch ingredients. Not into deep frying, dairy, high fat foods but unfortunately have a thing for Tex-Mex which pretty much always involves cheese and sour cream...so thanks to this website I've been able to find some great Mexican recipes without all the fat.
My favorite family cooking traditions
Cooking with my kids - they love to help out in the kitchen and don't mind what it is we're making, as long as they get to try it when we're finished - and of course they love licking the bowl when we're baking! We usually bake together at least once every weekend.
My cooking triumphs
Always seems to be that the best dishes are the ones that are created out of desperation - using what's left in the back of the cupboard and bottom of the fridge - and of course I can never replicate them.
My cooking tragedies
Too many to list - undercooked chicked, grilled pastry (I know!), too much chilli, etc....

Ginger Glazed Mahi Mahi
Fantastic, I loved it, kids loved it. Did as another reviewer suggested and baked for 15 minutes at 450, and it was perfect.

Caramel Apple Pie II
This was great, I left out the caramels and cut down the sugar, also used a bit more flour but it wasn't necessary, next time will stick to recipe's flour quantity. I used a cornmeal crust that went really well with the sweetness of this recipe.

Gingerbread Bears
I used molasses and more cinnamon/ginger but no cloves. Great flavor, but a bit dry and not as soft and chewy as I'd like.
