BBQ Bacon Ranch Dip
Made this for an appie for a dinner for 6 the other night, it disappeared! I used half fat free cream cheese, half light, and I think it could all be fat free and be fine. Used less than the whole packet of ranch dressing mix,too and it was enough. Also added a few scallions and served with Frito scoops, perfect combo. I only let it sit for an hour or so in the fridge, and it seemed like enough time. Someone wondered how it would be baked....interesting, might have to try that. I personally might like to try adding a meat layer, or add chicken in with the BBQ sauce layer.. Possibilies are endless and I appreciate the new recipe--thanks!

Elegant Orzo with Wilted Spinach and Pine Nuts
Had this for dinner one night, we loved it. Very pretty on the plate, flavors went very well together. Changed things to suit our tastes and what we had on hand and found recipe very forgiving. Less pine nuts and thought there was still enough, less butter and oil, and thought you could even wilt the spinach in stock or something. Used cherry tomatoes cut up, threw them in with the spinach at the last minute to warm them up, then mixed the feta right in with all of it, which made it so creamy. We did find the balsamic helped give it some zip, but it still needed a little more salt and pepper. I would like almost double the spinach tho. Thanks for sharing, we will definitely make this again!

Asian Lettuce Wraps
Made a huge vat of this for a Mothers Day celebration. LOOOOOVED IT. Was very easy to do, and was well received. My Mom has gluten allergies, so it was great to bring something that didn't have to go on a bun. Did adjust some things because of kids at party, less onion, green onion and hot chili paste. Kids even ate it that way. Kept the meat filling in a crock pot, and people kept hitting it all day. My new favorite taker to a party! I also used a mixture of ground chicken, pork and beef, and really liked the texture. Thank you for this recipe! :-)
