About this Cook
I am an African American mom of 2. I love recipes that are short on ingredients and short of time.
My favorite things to cook
Recipes low in fat and possible carbs. Recipes that are flavorful using he ingredients I have on hand.
My favorite family cooking traditions
I made a tradition of making soft gingerbread cookies not just for the holidays but for any day.
My cooking triumphs
Finally knowing what to use and how to use it. Example: Garlic press. AND also finding allrecipes.com website.
My cooking tragedies
I say the more cooking tragedies you have, the better you get at cooking. I can not think of any cooking tragedies to date. I try to read recipes in full before I decide to make them.

Chili I
The perfect chili for MY taste buds. I used 1 tbsp of veg oil, 1 can of kidney beans and GROUND TURKEY instead of beef. The chili is not thick, which makes it perfect over a slice of cornbread or with corn chips or my fave NACHOS. I don't call this a thick and chunky chili but just a perfect chili for people like me. I don't like a lot of stuff in chili, ex: chili meat, grease, beer or chunky stuff. Since I used turkey, I made sure to add more spices to the chili, like seasoning salt, onion powder and cayenne pepper. My kids like it and my husband and I loved it. You can thicken this chili by using a mixture of (1 tsp) flour and a little bit of water to make a paste and then add it to the chili. If you just add flour without water, you will probably have "flour balls" or streaks of flour that will be hard to get rid of. Keep in mind if you add a flour and water mixture, make sure to add more spices. Also use as much flour and water paste as needed for your desired thickness. I think the chili recipe the way it is written is PERFECT!! Enjoy!!

Salisbury Steak
I used 1 pkg of ground turkey 85/15. I DID NOT use the egg, ketchup, water, worcesershire or mustard powder. What I did was made the patties as it is written in step 1 but without the egg. Then I used the remaining of french onion soup mixed with a half jar of brown gravy. To make it thick I made a paste out of 1 tbsp of flour and added a little water to the flour until it was moist and looked like paste. Then I stirred the flour paste in the gravy. Covered and cooked for about 20 minutes. Always add water to flour when you add it to a sauce, if you do not, then your sauce will have "flour balls" little balls of flour. This is a very easy recipe. We love it. I make it once a week at least. Thanks Kelly!!

Quick and Almost-Professional Buttercream Icing
Wow. This is a great icing. I followed recipe exactly and it made my cake taste even better. I made a little einsteins cake for my daughter's birthday and froze the frosted cake in a cardboard box 2 weeks prior. I used a color paste to color the icing and it was perfect!! I am letting my kids decorate their own cake using this icing. Also, use REAL BUTTER like land o lakes. DO NOT use shortening or margarine. Wonderful!!!
