This cheesecake is awesome! I've been making it for a few years now. I am constantly asked to make it for family functions, and actually have to make it today for a function tomorrow. I follow the directions exactly. My cheesecake always cracks in the center, but it doesn't matter to me because I always top it with cherry pie filling. I will try some of the tips other people have suggested, though, such as not overbeating it and greasing the sides of the springform pan.
