Connie's Zucchini 'Crab' Cakes

I'm eating a leftover one right now and it's still fabulous the next day! Wow...these are soooo good!! The only thing I did different was when the patties were made, I sprinkled a little more Old Bay on each side. Yum yum yum!!!

Eggplant Parmesan II

This is my favorite recipe ever!!! I'm not kidding. It's my husband's as well. And my mom's. And my...well...you get it. I get requests to make this all the time and everyone has asked for the recipe. The has quickly given me the reputation as a very good cook! I use Prego Traditional sauce and it is the best.

SOOOOO good! And the dipping sauce is excellent. I use it for chicken nuggets as well. For the dipping sauce I add just a little drop of honey.

Baked Zucchini Chips

I love these! They are so easy and so tasty. They are even a huge hit with the picky kids in the house! Also, they are excellent warmed up the next day. Try it with yellow squash too. Yum!

Toasted Pumpkin Seeds

Great recipe! I let the seeds dry overnight on a cookie sheet. I also mix in some garlic powder and Jane's Crazy Salt. For me, they usually only take about 45 minutes in the oven.

Baked Teriyaki Chicken

Very tasty! I couldn't get my sauce to thicken very well, but that didn't matter. It still turned out great! I used skinless, boneless chicken breast and it only took about 20-25 minutes to cook. I basted it every 5 minutes. Very nice flavor. Hubby loved it!

Bread and Celery Stuffing

This was fantastic! The only thing was that I did leave the bread out overnight to get it a little more stale, which I'm glad I did. Otherwise, I didn't change a thing. I got many compliments. Wonderful!
