Cinnamon Rice with Apples

Ok, the reason this gets only 3 stars is not because of how it tasted, but because it did not call for enough liquid!! I kept having to add more apple juice to get the rice to cook all the way through. Anyone else have this problem?? The taste was very sweet, my kids gobbled it up. I will probably make again, but tweak to give it a more "grownup" flavor.

Chicken Tetrazzini IV

Very good! I used white wine instead of sherry, and added some minced garlic. It turned out great! No problems with it being too dry, but I may have used slightly less spaghetti than called for (just eyeballed it out of a LB box.) I look forward to playing with this one, it's a keeper!

Spaghetti Chicken Casserole

Nothing to write home about here. Totally edible, but not fantastic. Needs more spices. Garlic and maybe some Italian seasoning. Added a splash of chicken broth to keep it from getting too dry. Consistency was good, but if I did make again i'd use provolone cheese and Parmesan together. Cheddar was weird.

Pizza Dough I

Excellent for easy pizza in a pinch! I used my bread maker on the dough cycle, for an hour instead of the 1 1/2 hour it usually runs. Added a Tbsp. of honey and Tsp. of Italian seasoning. Really glad I tried this!

Wow...these are so yummy!! They came out perfectly crisp on the outside and so deliciously soft on the inside. These didn't crackle as well as other snicker doodle recipes I've used, but the taste is phenomenal!

Easy Batter Fruit Cobbler

Excellent taste, definitely a winner at our house. I only took off a point for presentation. It's just not something I would serve guests because it's not very impressive looking. But the taste is fantastic, the batter yeilds a great crust on top, and mixes with the rest of the fruit (which by the way is supposed to sink to the bottom)creating a yummy gooey sweet fruit mixture. I added a Tsp. of vanilla, and 1/2 tsp cinnamon to the batter. The cinnamon was a great addition because it complimented the (frozen) blueberries I used nicely. I did mix some flour with the blueberries before I added to the batter, just to soak up any extra moisture. The butter does look a bit scary at first, but completely disappears once it's done cooking. Only took 40 minutes in the oven. This is so easy, i'm sure it will be a staple in our house.

Clone of a Cinnabon

Really amazing... definitely NOT a Cinnabon though!! Hubby thinks they're better. Things i'll do differently next time--more cinnamon sugar filling. Great as it is written, we just like more gooey cinnamon filling. Took other reviewers advice and mixed all the filling together. Glad I did, it all stayed in the rolls, no major spillage into the pan. Also, I used all purpose flour with absolutely no troubles. I even used a bit less yeast, since the recipe calls for 2 1/2 Tsp. and a packet of yeast is 2 1/4. No worries, great rolls! Thanks!

Luscious Slush Punch

Mmmmmm...so yummy! I ended up combining all ingredients with only one bottle of sprite, and I have to say it was a very fortunate mistake! Ultra slushy, wonderful on a hot afternoon for a July birthday party. Pretty sure i'll be making it this way again! Next time i'll make two batches, because this went so quickly and was complimented by all. Wonderful recipe, nice alternative to the sherbet recipe punch (which i've never really liked!).

Chocolate Chip Banana Muffins

I used cake flour, they rose beautifully and didn't have that heavy banana bread texture. Also used 1% milk in place of the yogurt, although the chocolate chips all sunk to the bottom of the muffins...maybe try adding them to flour mixture before including wet ingredients? Also sprinkled chocolate chips on top halfway through baking, made for nice presentation.

Bessy's Zesty Grilled Garlic-Herb Chicken

Wow, was this good. I used 6 chicken breasts, since mine were fairly thin--and still had enough marinade leftover for 2 more chicken breasts!! (I'll be making those tomorrow for lunch!) I left out the saffron, b/c I don't usually have that on hand. Otherwise I made as written, and only marinated for an hour. It was amazing, caramelized to a really beautiful golden color. Flavor was phenomenal, I wouldn't change a thing. You do have to keep an eye on these while grilling, the sugar tends to want to burn if left over the heat too long.

Easy Chicken Satay

Excellent recipe! I had been looking for something similar to my husbands favorite dish at our favorite Thai restaurant, and I've definitely found it. Three things I did differently...Only one Tbsp lemon juice (I have really strong Italian lemon juice) A full Tbsp of the soy sauce, and a minor amount of red pepper flakes. My husband thanks you!!!!

Sesame Green Beans

Very good simple recipe. Fantastic crisp green beans. I didn't have sesame seeds, so in place of the olive oil I simply used sesame oil. (Obviously omitting the sesame seeds altogether)I used this as a side dish to go with a chicken satay. Everything was delicious!

Tomato Chicken Parmesan

This recipe is so easy to make, and really tastes pretty good in a pinch. I've definitely had tastier Chicken Parmesean in my day, but this gets points for the ability to have it ready in half an hour. I altered only the cook time in the oven. Set it to broil, and let the cheese melt for 4-5 min. (The red sauce was already hot.) We enjoyed a nice meal without a lot of fuss.

Best Ever Banana Bread

Ok, it's offical. This is now my go to banana bread recipe! So moist and sweet, with TONS of banana flavor. I didn't measure the bananas, just put in 3 large ones. Lined some mini muffin tins and they turned out beautifully. So light and fluffy you could actually call them muffins (not just dense banana bread in mini muffin form). I did add a tsp of vanilla to the wet mixture, and a tsp of cinnamon to the dry. But those are just my personal preferences for banana bread flavor. I also used 1% buttermilk, not full fat. Thanks for the great recipe!

Arrabbiata Sauce

This was an excellent and easy sauce to put together! The spice was a little hot for our taste, but diluting with about a half cup of crushed tomatoes (and a little extra red wine...) did the trick. Thanks for a great sauce recipe!

Heavenly Angel Food Cake

OMG!!! So delicious, my family and I had a hard time not devouring it in one sitting! This is not chewy like store bought angel food cake, it's light, airy, moist,and just a bit sweeter. You can't go wrong! This truly is Heavenly.

Pumpkin Bread Pudding with Caramel Rum Sauce

This was truly great! I used the Taste of Home pumpkin bread recipe because it makes two loaves of awesome pumpkin bread, and for this to be a good recipe you've got to start with a terrific recipe for pumpkin bread. The only reason I gave this 4 stars instead of 5 was because the amount of rum in the sauce is way too much for most peoples taste. You could easily use 2 TBSP of dark rum instead of 3. I ended up boiling the sauce in the microwave for 5 minutes just to boil off all the alcohol and give it a nice rum "flavor" instead of "god there's a lot of rum in this!" I also ended up diluting the sauce with a bit more caramel and heavy cream. So, truly a good recipe made better with a few adjustments.
