Chocolate Banana Bread

Reviewed: Aug. 9, 2009
Not too chocolatey, just right. I personally would have given it 4 stars because I thought it was good, but not to die for. I brought it to work and everyone scarfed it down, loved it, so hence the crowd-pleasing 5 stars! I had to bake it a little longer than the directions said. I adjusted the recipe to use 4 bananas since that is what I had and with that amount, I made a large loaf and two mini loaves. Used mini chocolate chips too. I highly recommend trying this recipe for a change to the usual banana bread!

Bacon Ranch Pasta Salad

Reviewed: Jun. 29, 2009
This went over very well at a picnic! Quite a few people went back for seconds and I got a lot of compliments. I'm a fairly picky person and it was nice to have a pasta salad that didn't call for peppers and onions and such. Made a few adjustments that worked great for us: used a 16oz. box of medium shells, a whole package of bacon (duh!) and no olives since I don't like them. It seemed like A LOT of ranch mix and it tasted pretty strong to me. As I ate some of the leftovers, I added some extra mayo/Miracle Whip and then it was perfect for me. Also, I did not find the recipe too salty. In fact, my bf wanted to add some salt and I wouldn't let him because I thought it was perfect.

The Best Vegetarian Chili in the World

Reviewed: Feb. 12, 2008
Yum! Served this at a family get-together and it was a hit! I made a few subtle changes - I don't care for green peppers and my hubbie doesn't like corn, so those were omitted. I used one can crushed, 1 can stewed, and 1 can diced tomatoes as that is what I had on hand. I also used garlic powder instead of cloves as I was short on time. Turned out just as good as my usual meaty chili! And I should add that it was super easy to make.

Easy Ice Cream Cake

Reviewed: Jul. 6, 2007
This dessert is amazingly delicious and so easy to make! When you put a slice on someone's plate they have no idea its just an ice cream sandwich! I can't wait to try this with variations such as the neopolitan ice cream sandwiches, with candies in the layers, or crushed Oreo's. Yum!

Jam Thumbprints

Reviewed: Dec. 24, 2005
These were pretty good, better if you make sure you slightly underbake them. I did one batch with putting the jelly on AFTER baking them and a second batch putting the jelly on halfway through baking. I preferred the batch in which I added jelly halfway through baking because it stays in place better and it looks nicer, more smooth. I used apple jelly and colored half green, half red for Christmas. The dough was very easy and nice to work with! Make sure you put a DEEP imprint in the cookie for the jelly. The first batch I put a regular thumbprint in the cookies and when they baked, you could hardly see it anymore and there wasn't much of a well anymore for the jelly.

Mum's Irish Apple Pie

Reviewed: Dec. 24, 2005
My expectations must have been high after reading all the great reviews as I wasn't all that impressed. This apple pie was good, but I thought the pie crust would be super, especially after all the work I put into it and it wasn't anything spectacular. I'm going to try this filling with the Best Pie crust recipe from this website - I enjoy that crust and its much easier to make. This crust was super crumbly and difficult to work with and roll out. Once you get it rolled out though, then it is like regular pie dough and it works fine. I sprinkled sugar on top of the pie crust before baking it - gave it a nice sweet touch. I cut back on the nutmeg to 1/2 teaspoon and added a 1/2 teaspoon cinnamon.

Chocolate Caramel Candy

Reviewed: Dec. 21, 2005
This recipe (well, very similar recipe) has been in my family and I LOVE it! We call them "Snickers Bars." The only difference I've used is melting the caramels with water. I'll try this version next time I make them. I just wanted to note that if you are thinking of making these bars, they are delish!

Jam Filled Butter Cookies

Reviewed: Dec. 21, 2005
Something didn't translate. I must have done something wrong because my cookies flattened like pancakes in the oven instead of looking like the traditional thumbprint cookies, as shown in the picture. I tried a few that weren't completely flattened and they tasted good. The dough was hard to work with, very crumbly and sticky when rolled in a ball. It helped when I let the dough chill for a bit first. I used apple jelly and colored half of it red, the other half green for Christmas. Since they were pretty yummy, I shall try to remake them and see if they bake better.

This was my first turkey and it turned out great! Perfect, moist, and delicious. I don't think I've ever had white meat this juicy! Thanks for the recipe.

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Nov. 25, 2005
Yum! This turned out great, even though I messed up a couple of times! First, I ended up baking it for twice as long because the middle wouldn't bake through. (I put it directly under the turkey...oops.) I had to trim the crunchy edges off. It got super moist after wrapping it in plastic and keeping it in the fridge. My other mistake which went unnoticed, was that I only used 2 tablespoons of margarine. I forgot the other 4 in the microwave where it was softening. Tasted great!

Best Ever Pie Crust

So simple, so easy, and very tender, flaky pie crusts! I will be using this for Thanksgiving pumpkin pie. I've only used it for my sloppy joe tarts so far and they've turned out great!

Aussie Chicken

Reviewed: Nov. 20, 2005
This recipe is DELISH! The chicken turned out so moist and tender. What a yummy entree! The honey mustard sauce gets baked in, so it isn't overpowering if you don't like honey mustard much. But if you do, then there's the extra honey mustard to dip it in! I skipped the refrigeration part as I didn't have time (what does that do anyway?) and I used regular boneless skinless breasts, not pounded thin - cooked a bit longer.

Oatmeal Butterscotch Cookies

I loved these cookies growing up! This recipe is pretty good. I like them more soft and chewy, so make them big drops and take them out just as the edges are set, just a touch golden brown.

Mom's Mozzarella Chicken for Drew

Reviewed: Nov. 17, 2005
This was a pretty good recipe that my husband and I enjoyed served over rotini pasta. I scaled it down for the two of us. The broth didn't really cook off a lot for me, so after awhile I just added the spaghetti sauce. (I used a whole jar of Ragu Parmesan & Romano.) The chicken was moist and tender. I wouldn't "die" over this recipe, hence not five stars, but certainly worth 4!

Lemon Garlic Tilapia

This fish was alright - good, but I probably won't be making it again. Too tangy for my tastes, I'd prefer a white sauce or just some butter. I strongly recommend baking fish at 425 for 10 minutes per inch of thickness, just until opaque.

Green Bean Casserole I

Reviewed: Nov. 14, 2005
A good, classic recipe. I'd give it 5 stars, if it weren't for the canned green beans. Please consider using the frozen green beans for a MUCH, MUCH better taste!! (I can't stand canned veggies!) I'll be using this recipe for Thanksgiving!

Bob's Awesome Lasagna

Reviewed: Nov. 5, 2005
Blah. I didn't really care for this lasagna, it seemed pretty blah to me. My husband liked it though, hence the 3 stars. But then, he said as long as it didn't have ricotta cheese in it, he'd like it. Sorry, not what I was looking for! Note: I used the no-boil lasagna noodles as well.

Beef Barley Vegetable Soup

Reviewed: Oct. 16, 2005
This was alright. A bit blah, not quite what I was expecting. I also don't like to put much work into soups or stuff that goes in a crock pot, so its a lot easier to throw the veggies and stuff right into the crock pot instead of wasting time on the stove. That would be the best time to put in the barley too as some of it dried up because there wasn't quite enough meat juice to get to them. I ended up adding a lot more barley, water, and boullion cubes and there still wasn't enough broth. I'm going to have to dig up my mom's version...much better! (My husband did like this though. I just thought it was boring.)Oh yeah, I nixed the tomatoes, I'm not a fan of tomatoes in my beef and barley soup, or any beef soup for that matter. Tomatoes = tomato soup or chili and that's about it in my world!

Chicken Enchilada Soup III

Reviewed: Sep. 29, 2005
Wow! This is SO good and very "authentic" tasting. I made a couple minor changes - suggestions from other reviewers: I used the "Mexican" blend of shredded cheese, garlic powder (I didn't have any garlic cloves on hand), I used 1 c of chicken broth instead of that 3rd cup of water, and closer to 1 tsp of ground cumin. I coudn't find that masa harina (and I was in an authentic Mexican grocery!) so I used something called Maserica (?) - it was instant corn tortilla flour. I also used closer to 3/4 cup of that mixed with the 2 cups of water. Very delicious! I'm going to add some black beans to my bowl, as my husband won't eat it if I would add those to the whole pot! Thanks for the yummy recipe!

Awesome Grilled Cheese Sandwiches

Reviewed: Sep. 27, 2005
Yuck. IMHO, these taste nothing like grilled cheese sandwiches made in a frying pan. The bread didn't cook evenly and it gets hard, not crispy. I would only recommend this recipe for large families that don't mind the difference in taste and texture. Now I know how the cafeteria at work makes their grilled cheese as they taste the same!
