Clark's Quiche

Reviewed: Dec. 19, 2009
It really is that good. I made one and froze one....can't wait to eat it! I did find the filling was a tad bit too much...will likely cut down on the mushrooms next time.

Never Fail Meatloaf

Reviewed: May 26, 2009
This was really good. I didn't use the BBQ sauce on top based on everyone's ratings, but I might add a little next time. It was delish without it too! I didn't have the bread stuffing...so I used bread crumbs and threw in some oatmeal. Also used 6 cloves of garlic (we love garlic.) Incredibly moist. I froze one and we ate one today (made last night.)

Antipasto Pasta Salad

Reviewed: May 25, 2009
People aren't kidding. This is really that good. A few tiny changes...used a yellow pepper instead of green, halved grape tomatoes instead of chopping whole. I did make everything the night before and put the dressing on 3 hrs before serving. Next time I would add a little bit more salami. TRY THIS RECIPE!

Italian Sausage, Peppers, and Onions

Reviewed: Dec. 28, 2008
I tripled this recipe for a large birthday party I was having. I made everything the night before and after cooling, put the large skillet into the fridge. Two hours before my party, I took the skillet out, heated it on the stove until warm, and then put in the crockpot on high until ready to eat (about an hour and a half.)I used 4oz sasuage links and kept them whole so people could make sandwhiches out of it. Put it on a fresh French baguette (so good on this type of bread...the baquette really stands up to the sauce.) This was a huge hit! People went back for 2nds and 3rds....my brother in-law made me pack up the 2 leftover sasuages for him to take home. This is a great recipe to make the day before and put in the crockpot so you can enjoy the party. Bravo!

Baked Ziti II

Reviewed: Dec. 28, 2008
Really good recipe. I doubled this for a party I was having and made it the night before. I used rigatoni and only boiled it for 1/2 the time...it cooked the rest of the way when I heated in the oven. I also layered the bake...sauce, pasta, ricotta mixture, and some extra mozzarella and repeated. I put in the fridge the night before, and took out 30 mins to take the chill off. I baked it for 40 minutes and it came out hot and bubbily....adults and kids both enjoyed!

I liked the make ahead part of this recipe....Thanksgiving day is so hectic! I found it a tad bit bland and had to add some more spices. Folks liked it...great with turkey and stuffing!

Pat's Baked Beans

Reviewed: Jul. 7, 2008
These are excellent! Made them for a BBQ, and even the non-baked bean eaters liked them! Made a few modification: Didn't use garbanzo beans, used Bush's Original Baked Beans instead. Reduced molasses to 1/4 c., and added 1/2 c. BBQ sauce, and 1/4 c. ketchup, used 3 large cloves garlic. Also increased bacon to 3/4 lb think cut bacon. Put everything in the crockpot...cooked on low for 6 hrs, took the lid off to allow thickening and cooked on high for 1 hr. It was PERFECT!

Stuffed Shells IV

Reviewed: Mar. 16, 2008
Made this recipe for dinner with relatives and they loved it (including a 2 year old)! A few small changes: used fresh parsley (3 tbsp), added 1/2 tsp nutmeg, used part skim ricotta instead of cottage cheese since I had it on hand. I made sure to really squeeze the spinach, and strained the liquid after cooking the veggies and ground turkey. I made it in the morning, put it in the fridge and pulled it out for dinner. Worked great! I'm so glad I have another tray in the feezer! I will make this again and again...worth the time!

Cocktail Meatballs I

Reviewed: Dec. 25, 2007
These really are that good. These were suppose to be an appetizer...we had an expensive honeybaked ham at our Christmas Eve buffet...but people ate the meatballs instead...they were putting them on rolls for sandwiches, eating them with crackers...all gone....who knew these would be so fabulous? Used frozen Italian meatballs from Costco, cut down the jelly by 1/2 cup, used 2 tbsp Worchester sauce, 1 tsp. mustard powder. Mixed the jelly mixture on the stove until hot, then poured it on the meatballs in a crockpot. Took the hour journey to our party, and put it on high for 2 hours and they were perfect. This recipe is a keeper!

Three-Meat Stromboli

Reviewed: Dec. 25, 2007
My first stromboli...and not my last..I will make this again and again. Used fresh dough ball from my grocery store...so much easier than the frozen dough...doubled the amount of garlic powder and used Italian seasoning as the other spices. Baked this at home and immediately wrapped it in foil and put it in thermal Pyrex carrier...it was still hot an hour and 15 minutes later when we arrived at the party...people snatched this up.

Apple Pie by Grandma Ople

Reviewed: Dec. 25, 2007
Holy Pie! So good...just made it for Christmas dessert and people loved it. Made it the day before and warmed it before serving with French Vanilla ice cream. Use the Pasty for Double Pie Crust recipe....did a full top crust with slits...added 1 tbsp of cinnamon and a dash of nutmeg to the syrup. Also poured most of the syrup over the apples before putting the top crust on and brushing it. I used 3 kinds of apples, Granny Smith, McIntosh and Braeburn...so good together. MAKE THIS PIE!

Pastry for Double Pie-Crust

I am usually a Pillsbury get it in the dairy section crust kind of girl...but I went out on a limb and tried this for Christmas Dinner....so easy...no kidding. I did add 1 tbsp sugar as some suggested and used the butter Crisco...made it with Grandma Ople's Apple Pie....I no longer fear pie crusts!

Banana Muffins II

Reviewed: Aug. 19, 2007
Really love these muffins...made a double batch as I had lot of super-ripe bananas. I used 1 c. applesauce instead of butter (1/2 c. per batch) and they were supermoist. I never missed the butter. Also added a good amount of cinnamon and nutmeg. I always spray the cupcake papers, makes them easy to get out after freezing.

Lisa's Chocolate Chocolate Chip Cake

Reviewed: Jun. 17, 2007
This was probably the best chocolate cake I ever made. Made it for my in-laws and everyone ate seconds! Made it a day ahead and it was still super moist. I was curious how it would be without frosting, but it doesn't need it at all. Served it with some ice cream. YUM YUM! This will be a favorite.

Broccoli and Tortellini Salad

Reviewed: May 14, 2007
This salad is excellent. I blanched the raisins for 1 minute which softened them. I also used frozen tortellini which came out great.I cut the sugar in half and it was perfect. I served this at a BBQ, and everyone loved it.
