Georgia Dirt Bombs

Easy, quick and tasty. A bit too sweet for me. Next time I'll finish with much less of the cinnamon sugar. But I tend to like things less sweet than the average bear and the recipe will probably be fine as is for most people.

Burgundy Pork Tenderloin

Got to invite someone over for dinner soon, because this is definitely company fare -- not that it isn't fine for just the wife and me (although that requires cutting it in half, and still leaves leftovers. When I served it, my wife said, "Oh, that looks so good." When she tasted it, she said, "Tastes good, too; really good. This is a keeper." So easy, too. Browned tenderloin in skillet before putting in oven, and added mushrooms, as another reviewer suggested, and it wasn't nearly done after 45 minutes; needed about 15 minutes more.

Cajun Baked Catfish

This is a fine recipe if you don't love catfish. The problem is that if you do love catfish (and I do), the spices completely mask the flavor of the fish. On the plus side, it is very easy, very quick.

Paula's Bread Sticks

I can make tasty biscuits and cornbread. I can make popovers that pot right through the roof. But I've never been able to make decent rolls despite trying dozens of recipes, some that seem to work perfectly for other people. These bread sticks are a wonderful substitute, and as an earlier reviewer noted, they reheat beautifully after freezing (15 minutes in foil at 350).

Classic Veal Marsala

I made this with pork and found it easy to make and to cut in half since there are only two of us. My wife's reaction was, "This is way too sweet; I don't like sweet meat," so I guess I won't be making it again, but if the sweetness isn't a problem for you, give it a try.

Cheeseburger Soup III

When my wife saw this recipe, she said, "I don't think it will be very good, but I'm willing to try it." I made it for lunch today, following the recipe precisely, and she loved it. I did too. It's the only acceptable use I know of for Velveeta cheese. Can't imagine it without the jalapena and cayenne; the spiciness is what makes it.

Chicken Enchiladas with Creamy Green Chile Sauce

I thought these enchiladas were excellent, but my wife found them rather bland and said she would prefer that I not make them again. She likes things spicy, though, and if your tastebuds don't match you'll probably like this.

Quick and Easy Home Fries

If you've read many of my reviews you know I don't hand out 5-star ratings for anything but recipes I consider extraordinary, but this one deserves it. It's hard to believe that anything so fast and simple could taste so good. Works best for me with potato cubes that are cut about 3/8-inch square.

Ham and Chicken Casserole

This one is easy and to my taste works best when you increase the amount of cheese a bit and add half of it to the sauce. Chicken is wasted, though. Just can't taste it. Next time I'll just use a bit more ham and omit chicken.(Chicken might work with a milder cheese though.)

South Georgia Biscuits

I've been eating biscuits in South Georgia for close to 70 years -- some good, some mediocre, many of them great. But never tasted any like these. Matter of fact, barely tasted these because they were close to tasteless. Sorry, because they were extremely easy to make. Might try them with buttermilk and see if that helps.

Baked Ziti III

We've tried a dozen or so recipes for baked ziti, trying to find one as good as and similar to one we enjoyed at a restaurant we visited frequently a decade or so ago when we lived in California. This one comes close, and in any event is very good. Don't need to change a thing, and the leftovers are excellent.

Sensational Steak Sandwich

It's hard to believe that I'm giving 5 stars to a sandwich, but this one ranks with Dick Pierce's Italian Beef Sandwich from this site as a truly fabulous meal. Even my 9-year-old nephew, a picky eater, loved this one.
