Butterscotch Oatmeal
This was great. I used 1/4 cup Splenda brown sugar, and I'll probably cut that in half next time I make this. It was a little sweet for my tastes.

Orange Cake

Layered Chicken and Black Bean Enchilada Casserole
I made a few changes. I used canned chicken breast meat to save time, and I used green enchilada sauce instead of the red. It tasted great and it's definitely something I will make again.
