Orange Pecan Cookies

Reviewed: Jan. 2, 2010
I made these cookies this year for Christmas. I have had this recipe in my notebook to try for some time. There's basically four types of cookies: Drop, Molded, Pressed, and Bar. This would be a molded cookie as it is shaped into a roll, refrigerated and then sliced to baked. I could not detect much orange flavor. I did dip one end of the baked cookie into a melted chocolate concoction which made them a little bit better. I made several cookies for Christmas. This one was left. I will not make these again.

This was excellent. The fresh lime juice really makes this dish. The amount of ingredients was right on.

Elegant Chicken

Reviewed: Sep. 1, 2009
I make a dish like this, but it is called "Company Chicken". We save it for special occasions. For those who have written the dish is too salty, try using less bacon and dried chip beef and low sodium soup. I gave this recipe to my girlfriend and she too uses it for special occasions. Both of us receive wonderful compliments from our guests when we serve it. I do believe this recipe calls for too much bacon. I use one half a slice to wrap around each medium chicken breast. The bacon is cooked; it's just not brown and crispy. I serve this with baked potatoes or boiled rice and broccoli spears and tomato aspic or fresh sliced heirloom garden tomatoes. This recipe always turns out perfect. Putting the the chicken in the oven early, frees up time to do other baking or last minute activities before company comes. Using a whisk to slightly blend the separated soup and sour cream and diisolve the "clots" would take care of those problems.

Spring Biscotti

Reviewed: Jul. 8, 2009
This recipe did not impress me. I have made better cranberry orange biscotti. It tastes a little bit like custard to me and I'm not a fan of custard. Just a word of caution: I made a double batch and switched top shelf and bottom shelf in the middle of baking the first round. My cookie sheet did not have edges and one of my loaves spilled off onto the oven door and floor. :(

This is a good cake, but the mousse/frosting needs improvement. Next time, I will try the white chocolate pudding mix.

Grandma's Easy Turkey Taco Salad

Reviewed: May 2, 2009
We really liked this. You didn't notice this was turkey/chicken instead of ground beef. Don't expect this to be hot. It's has a slightly sweet taste from the thousand island dressing. My husband really liked it. It makes another good chicken dish to serve instead of beef or pork. Think twice about putting the crushed chips in the salad. This recipe makes a large bowl of salad. If you don't think you are going to eat all of it and may have left overs, put the crushed taco chips on each individual serving. Otherwise, the left overs will have soggy chips in it.

Almond Chicken Salad

Reviewed: May 2, 2009
This is really good. WW points is 7 but the servings are very large. I toasted the pita pockets and ate in along with the salad. My bell pepper was especially sweet which really made it tasty. I think mandarin oranges would really be good in this also. My husband like this also.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Oct. 15, 2008
"The Best" These cookies don't spread all over the cookie sheet. I use a melon baller, put them very close together on the cookie sheet. I freeze the raw shaped cookie dough, put them in a plastic bag and pull out some now and then to bake. They turn out perfect every time. These are more "cakey" rather than "crunch". I really like them.

To Die For Blueberry Muffins

Reviewed: Jul. 1, 2008
Everyone has a different take on what a muffin should be. My opinion, muffins should have a soft crumb, rise like a tepee and taste slightly sweet. If you want sweet, then it's a cupcake. I tried this recipe because of all the reviews. The recipe says to fill the cup up with milk after putting the eggs in and the oil. My muffins were very flat. They spread so much, you couldn't see the muffin tin and were all touching ea other. Plus, they were flat. They looked somewhat like mushrooms but were even flatter. The taste was great-yummy, but really, for a "muffin" they were too sweet. I followed the directions exactly. Well, no, I turned down my oven as my oven runs hot. And I added the cinammon to the batter and left off the topping as I don't like topping on muffins. They're very tasty but look pretty bad and I just don't think they should be called muffins. They're too sweet and they certainly didn't look like a muffin!

Guacamole

I liked this but my family did not. They thought the cilantro over powered the avocado taste. It was additional work to chop the cilantro so I will go back to an easier recipe since my family did not appreciate the extra trouble.

Tiramisu Layer Cake

Reviewed: Jan. 31, 2008
I made this for my husband for his birthday as he loves tiramusu. The cake was very good. However, I am giving it a four instead of five because the cake needed a lot of alterations. I always read a lot of reviews before I decide to make a recipe but I didn't for this cake and really wish I had. Even though the cake was good, I could hardly taste the coffee and as many advised I should have added a lot more coffee flavors. Also, someone mentioned the cake is better if made a couple of days ahead. I also had a hard time following the recipe as to when to put coffee and liqeuer in what: filling, cake or frosting. This recipe is good, but I would think it would be so much better with the alterations the posters have suggested. Therefore, I am giving this recipe four stars.

Orange Cranberry Biscotti

This recipe crumbles too easily when you eat it. Biscotti I have made are pretty "crisp". I think it's a little too much like a "shortbread" vs. biscotti recipe.
