Hot Shredded Chicken Sandwiches

Really yummy sandwich filling; is good cold, also. I like to add diced celery. Especially a nice recipe for mothers with several children, because it makes alot. Much more economical also than buying overpriced lunchmeat, and healthier too I'd imagine. Great recipe!

Apple Crisp IV

Awesome recipe. I also made 1 and half times the "crumble" mixture. Used Granny smith apples. Awesome dessert, we had it with our thanksgiving dinner and it was great.

Fresh Peach Cobbler I

I hate to say it, but I hated this recipe. I tossed it out. Peaches were good, but the topping tasted like nasty bland flavorless biscuits. Gross.

Chocolate Chip Cookie Bars

I liked this bar. Of course, it was not as good as a regular chocolate chip cookie, but it had a nice shortbread quality that I enjoyed for a change, but would not want all the time. For the best shortbread taste you'd use all butter of course, but to save money I used half butter, half shortening and it still was nice and buttery. What I really appreciated about this recipe was the fact that it is egg-free, as my toddler son is allergic to egg. He enjoyed this recipe.

Chocolate Chip Mini-Muffins

Delicious! Cute presentation. Made a nice snack for my daughter's school lunches. Will add to list of things to make for her lunch for variety. And much fresher and more cost efficient than buying twinkies or whatever.

April's Chicken Fried Rice

My husband and 2 girls loved this recipe. I used 2 cups of cooked, chopped chicken, and I know this is unhealthy, but I used quite a bit of bacon grease to fry the rice in, as 1 measly tablespoon of butter is not near enough. I fried half the rice, and removed it from my nonstick skillet while frying the other half. If you don't use a nonstick skillet with this recipe, forget about it as the rice will only stick to the bottom and not brown. When I put in my mushrooms and onion, I nudged all the rice over a bit, and sauteed the veggies in the bacon grease. Lastly, I used 2 Tbsp. soy sauce instead of just 1; use only 1 and your rice will be super bland. Very yummy stuff.

Caramel Bars

Soooo good! I used a 9x13 pan, and I not only doubled the flour and oats, but the butter, brown sugar, baking soda, and salt. Doing this will make the mixture wet, not crumbly, so I used a rubber spatula to press out the bottom layer, then for the top layer I sort of pressed flat pieces with my hands then laid it over the top. Also, I used a whole 14 ounce bag of wrapped caramels(52 caramels) and melted it with 8 and a half tablespoons of milk- just as good! Because I did not use walnuts, I took another user's advice and used a half cup of coconut. Using extra caramel helps to not let the chocolate drown out the caramel flavor. I had to bake my bottom layer for 11 or 12 minutes and my top for 15 to 18 minutes. It will be nice, brown and a little dry looking when done. Try these, they are great!

Orange Peel Beef

Delicious! I doubled the sauce since hubby likes lots of sauce. I like my beef super crispy, so instead of cooking the beef in a pan, after marinating it I rolled it in cornstarch and deep fried it. I used powdered ginger and garlic instead of fresh, and I just put it along with my orange zest in the sauce mixture, then cooked my sauce mixture until thickened. I added cooked frozen broccoli to the sauce(if you add it still frozen it could water down the sauce), and then finally added the deep fried beef and stirred everything to coat with sauce. Scrumptious! Thank you, Diane! I always love to get good new Asian recipes.

Chocolate Covered Cherries

These were terrific to eat even right away! I would suggest buying the Great Value cherries from Walmart as another reviewer suggested. They are just much better because they are big and very juicy. My other cherries from the local grocery store were pretty small and not that juicy. Didn't make as good of a candy as the Walmart ones.

Bonbons

So delicious. I ran out of chocolate as well, so instead of using another bag of semisweet chips, I used 12 oz. of white almond bark melted with the 2 Tbsp. shortening. White bonbons are delicious as well!

Spicy Crispy Beef

This is so great! I like it even better than Panda Express' Crispy Panda Beef. I used top round steak, since it is much cheaper than flank steak, and I used powdered ginger(1 and a half Tbsp.). Also, I didn't have rice wine, so I just used extra rice vinegar in place of it, and it was still great. I didn't have fresh garlic; I forgot to add my 1/4 tsp. garlic powder, which is what I will do next time, but it was still very yummy even with no garlic. I hate spicy stuff, so I did not use any chile paste. This is a great Asian dish with a very tasty sauce. Try it!

To respond to another rater, YES!!!! This seasoning is awesome on turkey. I have done it 2 years in a row now. It is terrific. I never do the step of seasoning the night before, and it is still very flavorful and delicious.

Fabulously Sweet Pear Cake

Yummy cake. My oven runs hot, so the cake was done at 40 minutes. I served it with a simple vanilla frosting and it was great. It is much like banana bread, without the banana flavor of course. I could somewhat feel the texture of pears in the cake, but even though I used pears that were very overripe, you could not really taste the pears. It tasted like a yummy sweet cake.
