Chipotle Sweet Potatoes

I love these two items and never thought to put them together. They mesh so well! I was in a hurry so nuked the sweet potato before mashing and baking but I do like the taste better of potatoes cooked in the oven so will do that next time. Also, I like really spicy food so added extra chipotle. I almost always have sweet potatoes around and since I froze the remaining chipotles in seperate containers I can whip this up on a whim. Will definitely add this to the side dish rotation.

Annie's Fruit Salsa and Cinnamon Chips

Another five star! Made this for a bbq and it was polished off before anything else. The kids especially loved it and devoured the cinnamon chips. I only added a tiny bit of sugar and the fruit preserves and it was the perfect sweetness. The chips are so sweet already that I think more sugar would've been overkill. Thanks for the wonderful idea! I served the salsa in a glass bowl inside a larger glass bowl and arranged the chips around the edge in between the two bowls.

Kaese Spaetzle

Another five stars. Wonderful, love the nutmeg addition and the ease of this recipe. I do not have a spaetzlemaker so used the ziploc baggie idea someone else mentioned and that worked well as a substitute, they were quite as even but I looked at my colanders and the holes were tiny. So delicious and comforting, I will make this again and again (might even get a spaetzlemaker).

Kimchi Jun (Kimchi Pancake) and Dipping Sauce

I loved these. Such a nice, savory and slightly spicy dinner pancake. I made the dipping sauce but once tasting the pancake decided it would be good with something to balance it. This is not very authentic, but I mixed some hot chili paste with sour cream and just loved it served with that. What a great recipe and way to use Kim chee.

Scallops with Red Pepper Sauce

This was very nice! I am giving it five stars because of how easy it was and the taste was great. The simplicity of the ingredients really came together and the red pepper adds just the right kick. I used olive oil but I think it would be great with butter, too. Thanks for the great recipe!

Old-Fashioned Potato Pancakes

These were good, I followed the directions exactly, did spend some time dabbing the water off the potatoes, though. The parsely was fine, I like parsely though, but I think it would've been even better to use chives or green onion in place of parsely. Otherwise they came out really good, seemed to have the right ratio of ingredients. Also, I always salt and pepper to taste, I think as is this recipe has too much pepper for my taste.

Sweet, Sticky and Spicy Chicken

I was torn between a 4 and 5. Definite 5 on taste, so I did go with that, but as other reviewers said it really is a thin sauce that needs some work. This is suprising as when you're mixing the sauce it seems quite thick, then when you pour it on and heat it it turns very thin. Still, I just brought to a boil a couple times and reduced and it turned out to an acceptable thickness. Dredging the chicken in four is not a bad idea either. Also, I only had Tapatio which I didn't think would taste great for a hot sauce so I used Korean hot chile paste instead and it was GREAT. I will definitely add this to the rotation, thank you!

Oven Fries

Yup, as another reviewer said it's the sugar that makes these brown up and crisp, which I've rarely had happen before when making oven fries. Will use this method from now on, very versatile as well, think I'll do cajun fries next. Thanks!

Cheesy Sliced Potatoes

Great idea, and nice creamy texture at the end. I only made a small amount for myself, cooked in the microwave for 8 minutes then baked in the oven for thirty. I am sure I would've liked them just nuked though, but I really felt the microwaving first did not compromise the traditional scalloped potato flavor, and this cuts the normal hour plus baking time down to a reasonable 25-30 minutes to get a nice golden crust on top. Thanks for the quick and easy way to make these kind of potatoes!

Crispy Edamame

This recipe is right up my alley. I love edamame and salty crunchy snacks and to combine the two was a blessed union in this house. I didn't change a thing, might try some different spices next time like crushed red pepper but then again, it was great as is. Thanks for the idea!

Marinade for Chicken

Wow, I didn't think a marinade would be that good but this completely changed my boring chicken and rice dish. I changed the servings to 2 since I was just making one chicken breast, cut it up in pieces and marinated for about an hour and then stir fried in a little canola oil and it really made the chicken stand out. I will definitely make this again.

Good Old Fashioned Pancakes

Didn't change a THING and these were great. Best homemade pancakes I'd ever tried and got rave reviews from the 6 yr old pancake aficionado with "best pancakes EVER." I only give five stars to a recipe that is fantastic AS IS without any major changes in a recipe to make it good, and this is one of them!

African Chicken Stew

This was good, when I first put the peanut butter in it didn't taste right but the longer it simmered the more the flavors came together. I used a can of chicken broth and an already cooked rotisserie chicken from the grocery store. Good and hearty but not really my cup of tea, probably won't make again but it was nice to try.

Korean Spicy Chicken and Potato (Tak Toritang)

This was excellent and my first attempt at Korean food. I love the Korean spicy chicken at a local restaraunt and this was similar. I cut up boneless skinless breasts since I always have those on hand and added water chestnuts and red bell pepper a couple times. I don't know if this is the right sauce but I've been using "Ground Fresh Chili Paste" from the grocery store ethnic food section and have no complaints. I've made this four times now and it's become my favorite recipe and really quite easy. I can start the rice and chicken at the same time and pretty much just sit back, relax, enjoy a glass of wine and in 45 minutes, voila!

Salmon Fillets with Creamy Dill

This was fabulous! I used veganaise because that's all I had but I like mayo anyway. Here's the thing for me- if you have a cheap frozen salmon filet that you won't to dress up this recipe is PERFECT for that and my salmon tasted 100% better than ever before. If you have a lovely fresh salmon piece however, I still prefer olive oil, salt and pepper on a cedar plank on the grill because the natural salmon flavors aren't overwhelmed that way. That said, I am SO glad to find a way to doctor up a not so appetizing piece of fish.

Scrambled Eggs Done Right

Had to try these because it seems you either loved or hated them, and the verdict for me was that these were great! They were moist and fluffy and I could barely taste the mayo. To be fair though, I only had veganaise (ironic, huh?) so used that, mixed it with the water first until it looked like cream and then added the eggs. I'll definitely use this for scrambled eggs in the future.

Delicious Black Bean Burritos

These turned out great, I love cream cheese and the combination with the peppers and onions tasted great, I added diced green chiles as well and that was a nice touch. I didn't have black beans so just made my burritos layered with the cream cheese veggie mix, refried beans, cheese adnd garnished with sour cream, cilantro and avacado. Nice change from the usual bean and cheese burrito I mae.

Chickpea Salad II

Was going to give this a 4, but then let is set longer and wow, then I just loved it! Especially with the parmesan, that just topped it off to have that grated on top. I love balsamic though. I thought everything came out well after sitting fort awhile and then dustin with fresh grated parm just tops it off, wonderful!

Cilantro Potatoes

I thought these were good, I added half butter and half olive oil and roasted them in the oven instead of in a skillet. Mine came out crispy and tasty, love garlic and cilantro both so it's no surprise I liked this.
