Country Ham and Quick Buttermilk Biscuits

The biscuits were quick to make and tasted good. They didn't rise as much as I'd like and weren't very flaky, but for quick biscuits that taste good this is a good recipe.

Baked Basil Fries

These are good and a lot healthier than the frozen fries in the grocery store! Mine didn't come out as crispy as I'd like. Next time I'd leave them in the over for a bit longer and watch them to ensure they aren't overcooked. In preparation I put all the ingredients in a zip-lock bag and shook everything together.

Roasted Vegetables

My husband really liked this but it wasn't my favorite (I think due to the spices). It was fairly easy to make except for a lot of chopping. I would make again because it is so different from the normal vegetables.

Orzo with Parmesan and Basil

This is so easy to make and tasty! Both times I've made it I've added cooked chicken strips and heated all together at the end of the orzo cooking process. Smells good, too!

Breaded Rib Roast

It smelled great when it was cooking, but I think it ended up drying out the roast. I'd do half of the breadcrumb mixture next time so that there is some juice left in the pan.

Oven-roasted Salmon Steaks with Red Potatoes

I was disappointed in the flavor of this. I think next time I'll do a different topping/rub for the salmon. You definitely need the oranges on top -otherwise the flavor is dry. I like the idea of roasting the potatoes in the same pan.

Creamy Chicken Turnovers

My husband really liked this. The measures are off, though! If you're only supposed to put 1/2 cup into each triangle, there are 4 triangles, yet you need 3 cups of cut-up chicken? Obviously made too much for the 4 triangles, so you can cut back the chicken to 2 cups. The taste was okay. Would have liked a bit more zip to it somehow. Very easy to make and the presentation was different than a typical meal.

Spaghetti Squash I

This was easy to make and delicious! First time I've had spaghetti squash and it won't be the last! Even my one-year old loved it (I cut up the strands for her)! I didn't have fresh basil so I used about a teaspoonful dried and added it to the onion/garlic mixture.

Cheesy Acorn Squash

As squash goes this was a winner! I kept putting off making the acorn squash I bought because all other recipes have been so-so. The toppings for this squash helped give it great flavor! Microwaving the entire 20 minutes definitely helped the squash be easy-to-scoop. I'll make this again!

Goat Cheese and Spinach Turkey Burgers

Recipe was very simple and the cheese definitely helped the burgers be moist! I would add some more zip to them next time - at least added seasoned salt - and perhaps 1-2 minced garlic cloves. Good variety for a low-fat alternative!

Slow Cooker London Broil

Very easy to make and makes the house smell great. I put in 16 oz frozen beans 20 minutes before it was done and turned up slow cooker to high to make it a more substantial (and easy) meal. Very flavorful.

Sour Cream Coffee Cake III

This is a lot easier and just as tasty as a recipe I make for a tube pan. It was really moist in a 13x9 inch pan, and everyone at the office ate it up quickly! No crumbs remain!
